This Rainbow Pizza is easy to make and such a fun way to enjoy veggie pizza! It’s a feast for both the eyes and the palate, guaranteed to brighten any meal.

Ingredients

  • 1 pizza crust (store-bought or homemade vegan pizza dough)
  • 1 cup pizza sauce
  • 1 ½ cups mozzarella cheese, shredded (dairy or plant-based)
  • 1 cup cherry tomatoes, halved
  • 1 orange bell pepper, cut into bite-sized pieces
  • ½ cup corn kernels (fresh or frozen, thawed)
  • ½ medium zucchini, cut into bite-sized pieces
  • ½ cup broccoli florets, cut into small pieces
  • ⅓ cup purple cabbage, shredded
  • ¼ cup red onion, thinly sliced and cut into 1-2 inch pieces

Instructions

  1. Pre-heat your oven to a high temperature of 450 degrees F (230 degrees C). A hot oven ensures a crispy crust and perfectly cooked toppings.
  2. Carefully roll out your pizza dough into a large 12-13 inch circle. Place it onto a circular baking sheet or pizza stone. To achieve the unique double rainbow effect, pinch a small hole in the very center of the dough, then gently spread it open to create a small circular void. Find a small oven-safe bowl (like a ramekin or a small, heat-proof ceramic bowl) and place it securely in this central hole.   3. Evenly spread your favorite pizza sauce over the entire surface of the dough, leaving a small border around the edge for the crust. Then, generously sprinkle the shredded mozzarella cheese over the sauce.
  4. Now comes the fun part: arranging the rainbow! Starting from the outermost edge of the pizza (next to the crust), arrange the halved cherry tomatoes in a single, vibrant red row. Moving inwards, create the next band with the orange bell pepper, followed by the golden corn kernels.
