Ingredients
- ½ tablespoon olive oil
- 1 medium poblano pepper, deseeded & diced
- 2 cloves garlic, minced
- ½ white onion, diced
- 15 oz can black beans, drained and rinsed
- 2 tablespoons fresh cilantro, finely chopped
- 2 teaspoons chili powder
- ½ teaspoon cumin
- ½ teaspoon salt
- 2 cups shredded cheese, I used Pepper Jack but really any melty cheese would work well
- 6 medium Corn or flour tortillas*

Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced poblano pepper, minced garlic, and diced onion. Sauté these aromatics for approximately 5 minutes until they become tender and fragrant.
