Vegan Chocolate Raspberry Tart

Ingredients
For the crust:
- 1 ½ cups almond flour
- ¼ cup unsweetened cocoa powder
- ¼ cup coconut oil, melted
- 1 tablespoon pure maple syrup
- Pinch coarse sea salt
- ¼ cup coconut sugar
For the filling:
- 1 ½ cups of cashews, soaked overnight
- 1 cup of coconut cream*
- ½ cup of maple syrup
- 3 tablespoons of coconut oil – melted and cooled
- 2 teaspoons of lemon zest
- Juice of 1 lemon
- 1 teaspoon of vanilla extract
- ½ teaspoon of salt
- 1 ½ cups of raspberries (1 cup for filling and ½ cup, cut in half, for adding at the end, plus more for topping if desired)
- 1 tablespoon of corn starch
- Optional for a pinker color: 1-2 tablespoons beet juice
For chocolate drizzle:
- ½ cup of dark chocolate chips, melted
Instructions
For the crust:
- In a medium bowl, thoroughly mix all of the crust ingredients until fully combined. The mixture will have a slightly gritty texture.
- Press the mixture evenly into a tart pan (a large one or 3-4 smaller ones work well). Use your hands to compact it tightly onto the bottom and up the sides of the pan.
- Place the prepared crust in the freezer to chill while you prepare the filling.
For the filling:
- Combine all filling ingredients (except the extra ½ cup of raspberries, which will be used later) into a high-speed blender, such as the Vitamix Ascent Series.
- Blend on high for approximately 1 minute, or until the mixture is completely smooth and creamy. If your cashews weren’t soaked overnight, the filling might be slightly grittier but will still be delicious.
- Pour the smooth filling into the chilled crust and spread it out evenly with a spatula.
- Evenly arrange the reserved halved raspberries on top of the filling, then gently press them down. Using a rubber spatula, carefully spread a thin layer of filling over the raspberries to embed them within the tart.
- Transfer the entire tart to the freezer for at least 2 hours, or ideally overnight, to set completely.
- Remove the tart from the freezer about 30 minutes before serving to allow it to soften slightly to a perfect consistency.
- For the chocolate drizzle, place the melted dark chocolate into a small baggie. Snip a tiny hole in one corner of the bag and pipe the chocolate decoratively over the top of the tart.
- If desired, garnish with additional fresh raspberries.
- Slice, serve, and savor this delightful treat!
- Store any leftovers in the refrigerator.

*For the coconut cream, I recommend using the thick cream from a can of full-fat coconut milk. If you can’t find specific “coconut cream,” place a can of full-fat coconut milk in the fridge for a few hours. Once chilled, scrape the solid cream from the top, discarding the watery liquid at the bottom.
