10 Minute Elevated Ramen

This ramen dish can be thrown together in just about 10 minutes and is so delicious and filling for how easy it is!

Ingredients

For the Ramen:

  • 1 can of chickpeas, drained and rinsed
  • 2 ramen packets, roughly 6 ounces total, seasoning packets discarded
  • 12 ounce bag of Ocean Mist Season & Steam Vegetable Medley*

For the Sauce:

  • ¼ cup of soy sauce
  • 1 ½ tablespoons of toasted sesame oil, any oil will work here
  • 1 tablespoon of cornstarch
  • ¼ cup of broth
  • 1 tablespoon of rice vinegar
  • 2 tablespoons of maple syrup
  • 3 cloves of garlic, minced
  • 1 teaspoon of ginger, grated (can sub for 1/2 teaspoon of dried ginger)

Instructions

  1. Start by cooking the noodles according to package instructions. I like to *slightly* undercook mine by about a minute since they’ll cook a little more in the sauce. Once done, drain and set aside.
  2. Microwave the bag of veggies according to package instructions (typically 3 minutes).
  3. In a small bowl, whisk together all the sauce ingredients until well combined: soy sauce, oil, cornstarch, broth, rice vinegar, maple syrup, minced garlic, and grated ginger.
  4. In the same pot that you cooked the noodles, pour in the prepared sauce and set over medium heat. Bring to a gentle simmer and cook until it begins to thicken, about 2-3 minutes. Toss in the cooked noodles, chickpeas, and cooked veggies and stir to coat everything evenly in the rich sauce.
  5. Remove from the heat and serve immediately for the best flavor and texture!
