Ingredients

  • 1 pound pasta, such as Farfalle or your preferred shape
  • 2 tablespoons olive oil
  • 2 cups Brussels sprouts, quartered or halved
  • 2 cups cubed butternut squash
  • ½ cup water, plus more as needed
  • 1 teaspoon garlic salt
  • ½ cup walnuts or pecans, chopped and toasted if desired

For the dressing:

  • 2 tablespoons apple cider vinegar
  • 6 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon cinnamon

Instructions

  • Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to package instructions until al dente or to your desired tenderness. Once cooked, drain the pasta thoroughly and set it aside to cool slightly.
  • While the pasta is cooking, prepare the dressing. In a small bowl or jar, whisk together all the dressing ingredients: apple cider vinegar, olive oil, maple syrup, Dijon mustard, and cinnamon. Whisk until well combined and emulsified. Set aside.
  • Heat the 2 tablespoons of olive oil in a large skillet over medium heat. Add the quartered or halved Brussels sprouts and cubed butternut squash. Sauté for about 5 minutes, stirring occasionally, until they start to soften and get a slight char.
  • Pour in the ½ cup of water and sprinkle with garlic salt. Cover the skillet and let the vegetables steam for approximately 8-10 minutes. Stir frequently to ensure even cooking, until the Brussels sprouts are tender-crisp and the butternut squash can be easily pierced with a fork. Remove the skillet from the heat.
  • In a large mixing bowl, combine the cooked pasta, the sautéed Brussels sprouts and butternut squash, and the chopped walnuts or pecans. Pour the prepared apple cider dressing over everything.
  • Toss gently to ensure all the ingredients are thoroughly coated with the dressing. Serve immediately and ENJOY! This pasta salad is fantastic warm, but it also tastes incredibly good chilled as leftovers.
