What a week it has been! There’s a special kind of relief that washes over you when Friday finally arrives, marking the start of a much-needed weekend. The past couple of weeks have felt like a whirlwind, with my schedule overflowing more than I’d anticipated. This weekend, I am determined to truly unwind. I often find myself falling into the trap of scheduling rest time, only to fill it with an endless list of household tasks, leaving me more exhausted than when I started. My excitement for this weekend isn’t just about relaxation; it’s also about a new adventure that awaits right on my front porch! As I head home today, four magnificent fruit trees will be patiently waiting for me. If I could convey my overflowing joy and anticipation through the internet, it would surely be a cascade of vibrant emojis – an explosion of pure happiness! The mere thought of planting my very own fruit trees fills me with an inexplicable sense of wonder and delight. This isn’t a fleeting fancy; I’ve dreamed of planting an apple tree, my very own, for at least fifteen years. It’s a dream that has finally started to take root, quite literally.
The journey to acquiring these new additions to my aspiring home orchard began quite spontaneously. Just this past Tuesday, during what was supposed to be a brief lunch break, I found myself casually researching apple trees. What started as a simple inquiry into their cost quickly evolved into an engaging phone conversation with a lovely, experienced lady who has owned a gardening company in Georgia for her entire adult life. One thing led to another, and before I knew it, I was placing an order not for two, but for three apple trees, along with an impulsive, yet delightful, fig tree. Two apple trees simply didn’t feel like enough to fulfill my long-standing dream. I even decided to invest a little more to get more mature trees, hoping they would bless me with their first delicious fruits as early as next year! The thought of biting into a crisp, homegrown apple grown in my own backyard is simply intoxicating.
So, as of today, I am the proud owner of a diverse collection: a sweet Fuji apple tree, a tart Granny Smith apple tree, a perfectly balanced Honeycrisp apple tree, and a charming Italian fig tree. The fig tree was a delightful impulse, a spontaneous decision that I have no doubt will bring unique flavors and beauty to my garden. Quinoa Stuffed Acorn Squash

Ingredients
- 2 acorn squash
- 1 cup uncooked quinoa
- 2 ¼ cups of veggie broth
- ¼ cup of chopped cilantro
- 1 green bell pepper, finely diced
- 1 tablespoon of oil
- 2 cloves garlic, minced
- ⅛ tsp onion powder
- ⅛ tsp cayenne pepper
- ⅛ tsp cumin
- 1 can black beans drained and well rinsed
- optional for topping: extra cilantro, diced avocado
Instructions
- Pre-heat oven to 350 degrees F. Lightly grease a baking tray.
- Cut each squash in half (it doesn’t matter if you cut down the center of the stem or down the middle, either works just fine). Remove the seeds and lightly spray the flesh of each squash with cooking spray.
- Place the squash skin side down, on the baking tray and bake for 30-35 minutes or until the flesh is tender and easily separates from the skin of the squash.
- While the squash is baking, cook the quinoa by combining the broth and the quinoa in a medium saucepan. Cook according to package directions.
- Once the quinoa is done, remove from heat, stir in cilantro, and set aside to cool slightly.
- In a medium skillet, heat 1 tablespoon of oil over medium heat and add in the diced green pepper. Sauté for a few minutes until slightly softened, then add in the minced garlic, onion powder, cayenne pepper, and cumin. Stir well and cook for another 3 minutes until fragrant, then remove from heat.
- In a large bowl, combine the cooked quinoa, drained and rinsed black beans, and the sautéed green pepper mixture. Stir until all ingredients are thoroughly combined and evenly distributed.
- To serve, evenly stuff each roasted acorn squash half with the flavorful quinoa and black bean mixture. Garnish with more fresh cilantro and generous cubes of diced avocado. Serve warm and ENJOY this wholesome, satisfying meal!
