An easy to make vegan meal that’s perfect to satisfy that sweet and sour chicken craving! A delicious vegan fake-out take-out weeknight dinner!

Ingredients

  • 1 head of cauliflower, cut into bite sized pieces
  • Salt and pepper to taste
  • ½ cup cornstarch
  • cup oil + 3 tablespoons, divided

For the sauce:

  • ½ cup apple cider vinegar
  • ¼ cup ketchup
  • 2 tablespoons soy sauce
  • cup maple syrup
  • 1 teaspoon garlic salt
  • 1 tbs corn starch + 2 tbs water
  • For serving: sesame seeds, green onion, and rice/ quinoa

Instructions

  2. Place the cauliflower florets in a large plastic baggie (or a spacious bowl for easy tossing). Add the salt, pepper, and 3 tablespoons of the oil. Seal the bag or cover the bowl and give it a good shake to ensure the cauliflower is evenly coated. Then, add the ½ cup of cornstarch and toss again until every floret is thoroughly dusted.
  3. Heat the remaining ⅓ cup of oil in a large pot or deep skillet over medium-high heat. Once the oil is hot and shimmering, carefully add the coated cauliflower.
