  • 1 tablespoon of Dijon mustard, I used whole grain dijon
  • 1 teaspoon of cornstarch mixed with 4 tablespoons of water, or more apple cider

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and brown them for 5-7 minutes per side, depending on the size of your chicken pieces. Remove the chicken from the skillet and place it on a plate, loosely covered with foil. The chicken will continue to cook slightly while it rests.
  2. Reduce the heat to medium and add the sweet potato chunks to the skillet. Cook for 3 minutes, stirring occasionally.
  3. Stir in the chopped apples and cook for an additional 3 minutes, allowing them to soften.
  4. Add the onion, fresh thyme (or rosemary), and garlic powder. Stir to combine all ingredients and cook for another few minutes until the onion is translucent and fragrant.
