Ingredients

  • 3 bell peppers, (3 small or 2 large) cut into thin strips*
  • 1 small sweet onion, thinly sliced
  • 4 salmon fillets, roughly 6 ounces each but doesn’t need to be exact
  • ½ cup lime juice
  • 2 tablespoons water
  • 3 tablespoons olive oil
  • 2 cloves garlic, finely minced
  • ½ teaspoon red chili flakes
  • 1 teaspoon cumin
  • 1 ½ teaspoons fine sea salt
  • 1 ½ tablespoons honey
  • ¼ cup cilantro, finely chopped
  • for serving: lime wedges and additional chopped cilantro

Instructions

  1. Pre-heat oven to 400 degrees F (200°C) and spray a large baking tray with cooking oil.
  2. Make the marinade by whisking together the lime juice, water, olive oil, minced garlic, red chili flakes, cumin, fine sea salt, honey, and cilantro in a medium bowl. Set aside.
  3. Place the bell peppers and sliced onion on your prepared baking tray. Drizzle about 1/3 of the marinade over the vegetables and toss to coat evenly. Arrange them in a single layer.
