If you like Mexican Street Corn as much as I do then you’re going LOVE these Street Corn Nachos! It’s a simple bed of tortilla chips topped with melty cheese and a really delicious street corn salad. Simple to put together and seriously SO GOOD!

Ingredients

  • 10 oz tortilla chips, I used 1 batch of my homemade tortilla chips
  • 2 1/12 cups of shredded Monterey Jack or Pepperjack cheese
  • 1 batch of Street Corn Salad*
  • Optional for topping: avocado, jalapeno, cilantro, fresh salsa

Instructions

  • Pre-heat oven to 350 degrees F (175°C). Ensure your oven is fully preheated to guarantee an even melt of the cheese.
  • On a medium baking sheet, arrange the tortilla chips in a single layer, allowing for only light overlapping. This helps ensure every chip gets adequately covered and prevents soggy clusters. Evenly top the chips with your shredded cheese. Bake for approximately 5 minutes, or until the cheese is beautifully melted and bubbly. Keep a close eye on them to prevent burning.
  • Carefully remove the baking sheet from the oven. Spoon the prepared Street Corn Salad generously over the melted cheese.
