Super simple and delicious avocado tacos that are perfect for summer grilling season!

Ingredients

  • 4 California Avocados, sliced in half, pits removed
  • ½ pound of purple cabbage, shredded
  • ¼ teaspoon of salt
  • ¼ cup of red onion, thinly sliced
  • ¼ cup of cilantro, lightly packed (optional)
  • 1/4-1/2 of a jalapeño, finely diced (adjust to taste)
  • 2 tablespoons of lime juice
  • 1 tablespoon of olive oil
  • ½ cup of vegan mayo
  • 1-2 tablespoons of hot sauce (adjust to desired heat)
  • Cherry tomatoes for serving (optional garnish)
  • 8 corn tortillas for serving

Instructions

  1. Pre-heat your grill to low, around 350°F (175°C). Once hot, carefully grease the grill grates by dipping a paper towel in oil and brushing it on. Place the avocado halves, skin side UP, onto the grill and close the lid. Grill for approximately 5-7 minutes, or until nice grill marks appear on the flesh and the avocado is slightly softened. Gently remove the avocados from the grill. Once cool enough to handle, scoop the flesh from the skin and slice into thick strips (about 1/3 of an inch thick each). Set aside.
  2. Prepare the refreshing slaw by mixing together the shredded cabbage, salt, thinly sliced red onion, fresh cilantro (if using), lime juice, finely diced jalapeño, and olive oil in a medium bowl. Toss gently until all ingredients are well combined. Set aside to allow flavors to meld.
  3. For the spicy mayo, combine the vegan mayo and hot sauce in a small bowl. Stir well until the sauce is smooth and fully combined. Adjust the amount of hot sauce to achieve your preferred level of spiciness.
