These festive Candy Cane Cookies are fully vegan and so fun to make! A great family baking project.

Ingredients

  • ½ cup (1 stick) vegan butter, room temperature
  • ½ cup granulated sugar
  • 3 tablespoons almond milk, or any plant-based milk alternative
  • 1 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • ½ teaspoon baking powder
  • ¼ tsp salt
  • Red gel food coloring
  • Additional ½ cup of granulated sugar for topping

Instructions

  • Prepare Baking Sheet: Line a large baking tray with parchment paper. This prevents sticking and makes cleanup easy. Set aside.
  • Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well combined. This ensures even distribution of leavening agents. Set this mixture aside.
  • Cream Wet Ingredients: In the bowl of a stand mixer fitted with the paddle attachment (or using an electric handheld mixer), beat the softened vegan butter and granulated sugar together for about 2 minutes. Continue to beat, scraping down the sides of the bowl once, for another minute until the mixture is light and fluffy. Add the almond milk and peppermint extract, mixing until just combined. Be careful not to overmix at this stage.
  • Form the Dough: Gradually add the dry ingredients to the wet ingredients in the stand mixer bowl. Mix on low speed until a cohesive dough has formed, which typically takes about a minute. The dough should come together and pull away from the sides of the bowl.
  • Color the Dough: Remove exactly half of the dough from the mixer bowl and set it aside. To the remaining dough in the mixer, add about 10 drops of red gel food coloring. Mix until the color is uniformly distributed. You may find it helpful to knead the dough briefly with your hands at the end to ensure the coloring is fully incorporated and vibrant.
  • Shape the Candy Canes: Take a tablespoon-sized portion of the plain dough and roll it between your palms and fingertips into a log approximately 6½ inches long, ensuring it’s of even thickness. Repeat this process with the red dough. You will have two logs of contrasting colors. To form a candy cane, gently pinch one end of a white log and one end of a red log together. Now, the key is to gently twist the two logs together. I recommend laying both colors flat and continually crossing each color over the other, back and forth, building the twist. Avoid holding both ends and twisting, as this can stretch the dough unevenly and result in cookies that don’t bake as nicely. Once twisted, gently pinch the other ends together and shape the twisted dough into the iconic candy cane “J” hook.
  • Chill and Preheat: Place the shaped candy cane cookies on your prepared baking sheet, ensuring they are about an inch apart to allow for slight spreading. Transfer the baking sheet to the refrigerator and chill for a minimum of 30 minutes. This crucial step helps the cookies maintain their intricate shape and prevents them from spreading too much or puffing up excessively during baking. With about 15 minutes of chilling time remaining, pre-heat your oven to 350°F (175°C).
  • Bake: Bake the chilled cookies for 9-11 minutes, or until their bottoms are lightly golden brown. Keep a close eye on them, as baking times can vary. Once baked, remove the tray from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Optional Sugar Topping: Once the cookies are mostly cool to the touch, if desired, lightly spritz the tops of the cookies with a fine mist of cooking spray.
