  • 1 can of chickpeas, rinsed and drained
  • 1 large head of broccoli, chopped into bite sized pieces (about 2-3 cups)
  • 1 cup radishes, diced, about 8 medium radishes/ 1 bunch
  • 3 cups baby potatoes, diced
  • 2 cups cauliflower cut into bite sized pieces, about ½ a head of cauliflower
  • 1 ½ tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon cinnamon
  • ¼ tzatziki sauce for serving*
  • Optional for topping: tomatoes, minced parsley or other fresh herb, pumpkin seeds/ nuts
