  • 1 ¼ cups all-purpose flour*
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup brown sugar, packed
  • cup vegan butter, softened* (coconut oil also works well here but butter is preferred for texture)
  • cup peanut butter
  • 1 teaspoon vanilla extract
  • 9 ounces your favorite jelly

Instructions

  1. Pre-heat the oven to 350 degrees F (175°C) and lightly grease an 8×8 inch baking pan (a 9×9 inch pan can also be used, but may require slightly less baking time).
  2. In a large mixing bowl, combine the rolled oats, all-purpose flour, salt, baking powder, and packed brown sugar. Whisk these dry ingredients together until well combined.
  3. Add the softened vegan butter, peanut butter, and vanilla extract to the dry mixture. Mix until fully combined. The mixture will appear crumbly and somewhat dry, but it should hold together easily when pressed between your fingers.
