First Off, What Exactly Is Jackfruit?
For those new to this incredible fruit, let’s start with a quick introduction. Jackfruit is a large, tropical fruit native to South and Southeast Asia. It’s known for its bumpy green exterior and sweet, fibrous interior when ripe. However, for savory applications like these carnitas, we specifically use young, green jackfruit. Unlike its ripe counterpart, young jackfruit is fairly neutral in flavor, making it an excellent canvas for absorbing spices and sauces. Its unique fibrous texture, once cooked and shredded, remarkably resembles pulled pork or shredded chicken, making it an ideal plant-based substitute in dishes that traditionally feature those meats.
You can often find young green jackfruit pre-packaged in cans, typically packed in brine or water, at most Asian markets or well-stocked grocery stores in the international foods aisle. It’s a relatively inexpensive and widely available ingredient that opens up a world of culinary possibilities for plant-based cooking. While I am certainly an enthusiastic cook, I don’t claim to be a botanist! If you’re eager to delve deeper into the fascinating world of jackfruit, including its origins, various uses, and nutritional benefits, you can find a more detailed description HERE.
Beyond being a fantastic base for tacos, these Jackfruit Carnitas are incredibly versatile. They are absolutely delightful on their own, perhaps served with a side of rice and beans, but my all-time favorite application is undoubtedly Jackfruit Tacos. The combination of the rich, savory carnitas with fresh toppings is simply out-of-this-world delicious! They come together quickly, especially if you have leftover jackfruit, making them a perfect solution for a speedy and satisfying meal.

How to Make Irresistible Jackfruit Carnitas: A Step-by-Step Guide
Crafting delicious Jackfruit Carnitas is surprisingly straightforward, even if you’ve never worked with canned jackfruit before. This recipe breaks down the process into easy-to-follow steps, ensuring a successful and flavorful outcome every time. The key is in the preparation and the perfect blend of spices that infuse the jackfruit with that classic carnitas flavor.
Here’s a detailed walkthrough of how to transform humble jackfruit into a plant-based culinary marvel. The full, printable recipe with exact measurements is provided below.

1. Preparing the Jackfruit
The first crucial step is proper preparation of the canned jackfruit. Begin by draining the jackfruit from its brine or water. Then, rinse it thoroughly under cold running water to remove any residual briny taste. Once rinsed, gently squeeze out as much excess water as you can. You can use your hands or a clean kitchen towel for this. This step is vital because it allows the jackfruit to better absorb the flavorful seasonings we’ll be adding later.
Next, place the drained and lightly dried jackfruit pieces onto a cutting board. You’ll notice that the jackfruit pieces often have a harder, triangular core at one end. While edible, these core pieces are considerably tougher than the flesh and won’t achieve the desirable shredded texture. Carefully cut off and discard these harder core pieces, focusing on retaining only the softer, more fibrous outer sections of the jackfruit. This ensures a consistently tender and shreddable final product.

2. Sautéing and Shredding
In a large skillet or Dutch oven, heat your olive oil over medium heat. Once shimmering, add the diced sweet onion and sauté for about 5 minutes until it begins to soften and become translucent, releasing its sweet aroma. Next, add the minced garlic, sea salt, and black pepper. Cook for an additional minute, stirring constantly, until the garlic is fragrant, being careful not to burn it.
Now, add the prepared jackfruit to the skillet with the sautéed aromatics. Stir to combine, then use the back of a sturdy spatula or a wooden spoon to gently press down on the jackfruit. As you press and stir, the fibrous jackfruit will begin to break apart and shred, mimicking the texture of pulled meat. Don’t worry if it’s not perfectly shredded yet; it will continue to break down further as it cooks. Continue to sauté and lightly mash for 2-3 minutes, ensuring the jackfruit is coated with the onion and garlic.
3. Simmering for Flavor Infusion
Once the jackfruit is lightly shredded, it’s time to build those deep, rich carnitas flavors. Add the chili powder, dried oregano, bay leaves, brown sugar, fresh orange juice, fresh lime juice, and vegetable broth to the skillet. Stir all the ingredients together until everything is well combined and the jackfruit is submerged in the liquid.
Bring the mixture to a gentle simmer over medium heat. Once simmering, reduce the heat to low, leaving the skillet uncovered. Allow the mixture to simmer slowly for approximately 14-16 minutes, or until all of the liquid has evaporated and been absorbed by the jackfruit. During this simmering process, stir frequently to prevent sticking and to ensure that the jackfruit evenly soaks up all the wonderful flavors from the broth and spices. This step is crucial for tenderizing the jackfruit and infusing it with the classic sweet and savory notes of carnitas.

4. Baking for Crispy Perfection
Once all the liquid has evaporated and the jackfruit is tender and deeply flavored (it should look much like the photo above), remove the bay leaves from the skillet and discard them. Bay leaves have imparted their aromatic notes and are no longer needed.
Preheat your oven to 425° F (220° C). Line a baking tray with parchment paper for easy cleanup and to prevent sticking. Spread the cooked jackfruit carnitas evenly across the prepared baking sheet in a single layer. This allows for maximum surface area to get wonderfully crispy.
Bake the jackfruit carnitas in the preheated oven for 25 minutes. To ensure even browning and crispiness, make sure to flip the jackfruit halfway through the baking time. This baking step is what truly transforms the tender jackfruit into authentic-tasting carnitas, developing those irresistible crispy edges that are a hallmark of the dish.
Once baked to perfection, your Jackfruit Carnitas are ready to be enjoyed! Serve them immediately in warm tortillas with your favorite toppings for an unforgettable taco experience, or explore the many other delicious ways to incorporate them into your meals.

- Storing Leftovers: Once cooled, transfer any leftover jackfruit carnitas to an airtight container. They will keep beautifully in the refrigerator for up to 4-5 days.

Frequently Asked Questions About Jackfruit Carnitas
New to cooking with jackfruit or making plant-based carnitas? Here are some common questions and helpful answers to guide you:
Q: Where can I find young green jackfruit?
A: Young green jackfruit is typically found canned in brine or water. Check the international foods aisle of your local grocery store, Asian markets, or specialty health food stores. Ensure you buy “young” or “green” jackfruit, not ripe jackfruit which is sweet.
Q: Can I use fresh jackfruit instead of canned?
A: While fresh young jackfruit can be used, it requires significantly more preparation, including cutting and boiling the fruit to soften it before it can be shredded. For convenience and consistency, canned young green jackfruit is highly recommended for this recipe.
Q: What if my jackfruit isn’t shredding easily?
A: If you’re having trouble shredding the jackfruit with a spatula, it might be due to not removing enough of the tough core pieces. Ensure you’ve trimmed off all the hard, triangular bits. You can also use two forks to pull it apart, similar to shredding pork.
Q: Can I adjust the spice level?
A: Absolutely! The chili powder in this recipe provides a mild, earthy warmth. If you prefer more heat, you can add a pinch of cayenne pepper or a dash of your favorite hot sauce during the simmering stage. For a milder version, slightly reduce the amount of chili powder.
Q: Is this recipe gluten-free?
A: Yes, this Jackfruit Carnitas recipe is naturally gluten-free as long as your vegetable broth is gluten-free. For serving, ensure you use gluten-free tortillas or serve over rice or lettuce wraps.
Q: Can I make this recipe in an Instant Pot or slow cooker?
A: While the simmering step can be adapted for a slow cooker or Instant Pot for tenderizing the jackfruit, the final baking step in the oven is crucial for achieving those signature crispy edges of traditional carnitas. You would still need to transfer the cooked jackfruit to a baking sheet for crisping.
Q: What other spices could I add for variety?
A: Feel free to experiment! Cumin, smoked paprika, a touch of cinnamon, or even a hint of cloves can add different layers of depth and warmth to the carnitas flavor profile. Start with small amounts and adjust to your taste.
