- 1 15-oz can of black beans, rinsed and drained
- 8 large flour tortillas
- 2 cups of enchilada sauce
- Optional for topping: vegan cheese, avocado, red onion, tomatoes, vegan sour cream, fresh cilantro, lime wedges, hot sauce, etc.

- Pre-heat the oven to 350 degrees F (175°C) and lightly spray a large casserole dish (approximately 9×13 inches) with cooking spray to prevent sticking.
- Prepare your jackfruit: Begin by cutting off the hard, fibrous core from each piece of jackfruit – this part should be discarded. Then, use your fingers or two forks to shred the remaining tender jackfruit pieces into a texture resembling pulled chicken. Set aside.
