The Quest for Quick & Delicious Weeknight Dinners

In today’s fast-paced world, finding meals that are both easy to prepare and truly enjoyable can feel like a culinary quest. I recently polled my wonderful community on Instagram, asking what kind of recipes you desired most, and the answer was overwhelmingly clear: more effortless, “lazy night” dinners. You spoke, and I listened! That’s precisely what we’re delivering today – a dish designed to minimize effort without compromising on taste or satisfaction. This Brussels Sprouts Pesto Gnocchi recipe is a testament to the fact that quick meals can still be incredibly flavorful and nourishing.

Our approach to “super easy” in this recipe leverages a few brilliant shortcuts. We’re featuring the fantastic Ocean Mist Quick Cook Sprouts, a game-changer for speed and convenience. Paired with your favorite store-bought pesto (I’ve even found an incredible vegan option that I adore!), and a package of soft, pillowy gnocchi, this meal comes together with remarkable speed. Despite its rapid preparation, the result is a deeply satisfying and utterly delicious dinner that you’ll want to add to your regular rotation.

Discovering the Magic of Ocean Mist Quick Cook Sprouts

My obsession with Ocean Mist Quick Cook Sprouts is well-documented (you can explore another recipe featuring them here!), and for good reason. While I’ve always been a fervent fan of Brussels sprouts, I haven’t always appreciated the time they typically require to cook to perfection. These innovative Ocean Mist Sprouts are nothing short of a culinary marvel; they’re ready in just FIVE minutes, consistently blowing my mind with their speed and quality. This speedy cooking time is a major win for anyone looking to incorporate more vegetables into their diet without the lengthy prep.

What truly sets these sprouts apart, beyond their rapid cooking, is their thoughtful packaging design. You can easily open the package, add your desired seasonings directly inside, and then reseal it before microwaving. This simple feature makes a monumental difference. Unlike many other packaged vegetables that require transfer to a separate bowl for seasoning, the ability to infuse flavor before cooking means every sprout is perfectly seasoned and ready for action. This thoughtful detail not only saves time but also minimizes cleanup, making your cooking experience even more enjoyable.

Mastering Your One-Pan Pesto Gnocchi: A Step-by-Step Guide

As I’ve enthusiastically highlighted, the beauty of this Brussels Sprouts Pesto Gnocchi recipe lies in its incredible speed and simplicity. You’ll be amazed at how quickly you can transform a few basic ingredients into a gourmet-level meal. Let’s walk through the straightforward steps to bring this delightful dish to life:

Ingredients: Gather Your Essentials

  • ⅔ cup of pesto* (store-bought for convenience, or homemade if you prefer)
  • 16 oz package of gnocchi (shelf-stable or refrigerated, depending on your preference)
  • 16 ounce package of Ocean Mist Quick Cook Sprouts
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Parmesan for garnish (optional, but highly recommended; Violife offers a fantastic vegan parmesan alternative!)

*For the pesto: I often reach for a delicious store-bought option (Trader Joe’s has an excellent vegan one!). However, if you’re feeling ambitious, you can find my recipe for homemade Vegan Pesto HERE.

Instructions: Quick Cooking, Maximum Flavor

  1. Begin with the Gnocchi: Bring a medium pot of lightly salted water to a rolling boil. Carefully add the gnocchi to the boiling water. Cook according to the package directions, which usually takes only a few minutes until they float to the surface. Once cooked, drain the gnocchi thoroughly and return them to the same pot.
  2. Prepare the Sprouts: While your gnocchi is cooking, grab your package of Ocean Mist Quick Cook Sprouts. Open the package and drizzle in the tablespoon of olive oil, along with a generous pinch of salt and freshly ground black pepper. Reseal the package and give it a good shake to ensure the sprouts are lightly and evenly coated with the seasonings.
  3. Microwave the Sprouts: Following the package instructions, microwave the seasoned sprouts. The recommended cooking time is typically 5 minutes, but for sprouts with a slight bite and beautiful green color, I often find 4 minutes to be perfect. Adjust based on your preferred tenderness.
  4. Combine and Serve: Once the gnocchi is drained and back in its pot, and the sprouts are freshly cooked, add the pesto and the steamed Brussels sprouts to the gnocchi. Stir everything together gently but thoroughly, ensuring every piece of gnocchi and every sprout is beautifully coated in the vibrant pesto sauce.
  5. Garnish and Enjoy: Transfer the pesto gnocchi mixture to a serving dish or directly to a skillet for a rustic presentation. If desired, sprinkle with freshly grated Parmesan cheese or a vegan alternative. Serve immediately and savor the incredible flavors of this quick and easy masterpiece!

Customizing Your Pesto Gnocchi Experience

One of the many joys of this Brussels Sprouts Pesto Gnocchi is its versatility. While it’s utterly delicious as is, feel free to personalize it to your taste or what you have on hand. I often serve mine with a sprinkle of good quality Parmesan cheese, which adds a wonderful salty, umami kick. For those following a plant-based diet, a vegan Parmesan substitute works beautifully – Violife makes an excellent one that melts and tastes remarkably similar.

Looking to elevate it further? Consider adding a handful of cherry tomatoes for a burst of freshness and color, or stir in some fresh spinach right at the end to wilt into the warm pasta. Toasted pine nuts or walnuts can add a delightful crunch and nutty flavor, complementing the pesto perfectly. A dash of red pepper flakes will introduce a subtle heat, if you enjoy a little spice. This dish is also fantastic with a squeeze of fresh lemon juice just before serving, which brightens all the flavors.
