Key Ingredients for Vibrant Spring Rolls
The magic of these Rainbow Spring Rolls comes from a thoughtful selection of ingredients that bring both color and taste to the forefront. Here’s a closer look at what makes these rolls shine:
- Extra Firm Tofu: The star protein of our rolls. Using extra-firm tofu is crucial as it holds its shape well and gets beautifully crispy when cooked. Pressing the tofu before cooking is key to removing excess water, allowing it to absorb marinades better and achieve that perfect texture. Marinated in a delicious teriyaki sauce, it adds a savory depth that balances the freshness of the vegetables.
- Rice Noodles: These provide a delightful chewiness and act as a base for our fillings. The unique blue color comes from blue spirulina powder, a natural superfood that is tasteless but adds an incredible visual pop, making your rolls truly “rainbow.”
-
Rainbow of Vegetables:
- Red Bell Pepper: Adds a sweet crunch and a vibrant red hue.
- Large Carrot: Julienned carrots offer a sweet, earthy flavor and a bright orange color.
- Ripe Mango: Sliced mango brings a juicy sweetness and a beautiful yellow, tropical touch.
- Ripe Avocado: Provides a creamy texture and a rich green color, along with healthy fats.
- Persian Cucumber: Delivers a refreshing, crisp element and a lighter green shade.
- Purple Cabbage: Offers a gorgeous deep purple color and a satisfying crunch.
- Optional Mint: Fresh mint leaves introduce a burst of aromatic freshness that elevates the entire flavor profile.
- Rice Paper Wrappers: These thin, translucent wrappers are the canvas for our colorful creation. They become pliable when soaked, making them easy to roll and allowing the vibrant fillings to show through.
- Teriyaki Sauce & Sesame Oil: Used to marinate and cook the tofu, infusing it with umami-rich flavors and a hint of nuttiness.
- Blue Spirulina Powder: A natural food coloring agent derived from blue-green algae. It’s flavorless, making it perfect for coloring the rice noodles without altering the taste of your spring rolls.
- Peanut Sauce: The quintessential dipping sauce for spring rolls. Its rich, savory, and slightly sweet profile perfectly complements the fresh ingredients within the rolls.

Ingredients
- Half a block of extra firm tofu, about 7oz
- 3 tablespoons of teriyaki sauce, I love the Trader Joe’s one!
- ½ tablespoon of sesame oil
- 4 oz of rice noodles
- 1 tsp blue spirulina
- 6 pieces of rice paper
- 1 red bell pepper, cored and thinly sliced
- 1 large carrot, peeled and julienned
- 1 ripe mango, thinly sliced
- 1 ripe avocado, peeled, cored, and thinly sliced
- 1 Persian cucumber, thinly sliced
- 1 cup of purple cabbage, thinly sliced
- Optional mint
- Peanut sauce for serving
Instructions
-
Press the tofu to remove excess water, or use super firm tofu that does not require pressing. Once pressed, slice it into half-inch strips.
-
Heat the sesame oil in a large skillet over medium-high heat. Once hot, add the tofu strips and cook for about 5 minutes per side, or until they achieve a deep golden-brown crispness. Pour in the teriyaki sauce and continue to cook for an additional 2 minutes, allowing the sauce to coat the tofu beautifully. Remove the tofu from the skillet and let it cool slightly before slicing it into thinner strips, suitable for rolling.
-
Prepare the rice noodles according to the package instructions until al dente. Drain them thoroughly and rinse under cold water to stop the cooking process and prevent sticking. Transfer the cooled noodles to a large bowl. Sprinkle 1 teaspoon of blue spirulina powder over the noodles and gently toss until the color is evenly distributed throughout, creating vibrant blue noodles.
-
Prepare your rolling station. Fill a shallow dish with warm water for soaking the rice paper. Dip one piece of rice paper into the warm water for about 15-20 seconds, or until it becomes soft and pliable. Lay the softened wrapper flat on a clean, damp surface (a cutting board or large plate works well). Evenly arrange a small portion of the tofu strips, sliced veggies (bell pepper, carrot, mango, avocado, cucumber, purple cabbage), and blue rice noodles in the center of the wrapper. If using, add a few mint leaves. Fold in the sides of the wrapper, then tightly roll it up from the bottom, ensuring the fillings are secure.
-
Repeat the rolling process with the remaining ingredients until all 6 spring rolls are assembled. Serve your beautiful Rainbow Spring Rolls immediately with a side of creamy peanut sauce for dipping and ENJOY this fresh, flavorful meal!

Tips for Perfect Rainbow Spring Rolls
Crafting perfect spring rolls is an art, but with a few simple tips, you’ll be rolling like a pro in no time:
- Don’t Over-Soak the Rice Paper: Rice paper becomes very delicate when over-soaked. A quick dip (15-20 seconds in warm water) is usually enough to make it pliable. It will continue to soften as you fill it.
- Work on a Damp Surface: A slightly damp cutting board or a clean, damp kitchen towel will prevent the rice paper from sticking as you roll.
- Don’t Overfill: This is a common mistake. Start with a modest amount of filling. Too much will make the rolls difficult to close and prone to tearing.
- Roll Tightly: A tight roll ensures your spring rolls hold their shape and don’t fall apart when you pick them up or dip them. Fold in the sides first, then roll firmly from the bottom.
- Prep All Ingredients First: Have all your chopped vegetables, cooked tofu, and noodles ready and arranged before you start soaking the rice paper. This makes the assembly process smooth and efficient.
- Customize Your Rainbow: Feel free to experiment with other colorful vegetables! Thinly sliced red cabbage, yellow bell pepper, or even thinly sliced beets can add more colors and flavors.
- Make Ahead: Spring rolls are best eaten fresh, but you can prepare them a few hours in advance. Wrap each roll individually in plastic wrap to prevent sticking and drying out, then store them in an airtight container in the refrigerator.
Serving Suggestions & Dipping Sauces
While these Rainbow Spring Rolls are undeniably delightful on their own, a good dipping sauce elevates the experience to another level. The classic choice is a rich and creamy Peanut Sauce, offering a perfect balance of savory, sweet, and tangy notes that complement the fresh ingredients beautifully. You can also explore other options:
- Sweet Chili Sauce: For those who enjoy a little kick and sweetness.
- Soy Ginger Dressing: A light and zesty option that highlights the freshness of the vegetables.
- Hoisin Sauce: A thick, sweet, and savory sauce that pairs wonderfully with tofu.
- Almond Butter Dip: A nut-free alternative to peanut sauce, made with almond butter, soy sauce, lime juice, and a touch of maple syrup.
Serve these rolls as a light lunch, a vibrant appetizer for a gathering, or even as a refreshing side dish. They are versatile and always a crowd-pleaser!
Nutritional Highlights of Rainbow Spring Rolls

Frequently Asked Questions (FAQs)
Have questions about making these Rainbow Spring Rolls? Here are some common queries and their answers:
Q: Can I make these spring rolls ahead of time?
A: Yes, you can prepare them a few hours in advance. To prevent them from sticking together and drying out, wrap each roll individually in plastic wrap and store them in an airtight container in the refrigerator. They are best consumed within 1-2 days for optimal freshness.
Q: What if I don’t have blue spirulina?
A: No problem at all! The blue spirulina is purely for aesthetic purposes. Your spring rolls will still be delicious without it. You can simply use plain rice noodles, or if you want to add color naturally, you could try a tiny bit of beet juice (for pink/purple) or spinach juice (for green) in the noodle water, though this might slightly alter the flavor.
Q: Can I use different vegetables or protein?
A: Absolutely! Spring rolls are incredibly versatile. Feel free to use any vegetables you have on hand, such as spinach, sprouts, red onion, or even finely shredded zucchini. For protein, cooked shrimp, shredded chicken, or other plant-based options like tempeh or even mushrooms would work well.
Q: How do I prevent the rice paper from tearing?
A: The key is to not over-soak the rice paper. Only a quick dip until it’s pliable is needed. Also, make sure your rolling surface is clean and slightly damp. Handle the softened wrappers gently, and don’t overfill them, which can cause tension and tearing during rolling.
