This Pineapple Fried Rice is super easy to make and packed with veggies!

Ingredients

  • 4 cups of cooked rice, day old rice is ideal*
  • 2 ½ tablespoons of coconut oil, any other oil will work well!
  • 5 cloves of garlic, finely minced
  • 1 inch of ginger, peeled and finely minced (about 1 tablespoon)
  • 1 ½ cups of yellow onion, chopped
  • 1 cup of carrot, diced
  • 1 medium bell pepper, finely diced
  • 1 ½ cups of fresh or frozen pineapple
  • ½ cup of peas, I used frozen peas, thawed
  • 4 tablespoons of soy sauce
  • 2 tablespoons of sesame oil

Instructions

  1. Heat your coconut oil over medium heat until hot. Add in the minced garlic, ginger, chopped onion, and diced carrots. Sauté for about 5 minutes, allowing the aromatics to become fragrant and the carrots to slightly soften. Then, add in the pineapple chunks and finely diced bell pepper. Continue to sauté for an additional 5 minutes, stirring frequently to ensure even cooking and to prevent sticking.
  2. Next, add the cold, day-old rice, thawed peas, soy sauce, and sesame oil to the skillet. Stir thoroughly to combine all the ingredients, ensuring the rice is well coated with the sauce and vegetables. Once fully mixed, let the rice cook undisturbed for a few minutes. This allows the bottom layer of rice to get a desirable crispy texture. After a few minutes, stir to toss the rice, then let it sit again for another couple of minutes to develop more crispiness. Repeat this process 2-3 times to achieve your preferred level of crispiness.
  3. Remove the skillet from the heat. Taste and season the fried rice with a bit of salt and freshly ground black pepper to your liking. Serve immediately and ENJOY your homemade Pineapple Fried Rice!
