Essential Ingredients for These Gluten-Free & Vegan Chocolate Peppermint Cookies:

Crafting these delectable cookies relies on a few key ingredients that ensure they are both delicious and cater to specific dietary needs. Each component plays a vital role in achieving that perfect festive flavor and texture:

  • Gluten-Free 1-to-1 Flour Blend: For those managing gluten sensitivities or allergies, a good quality 1-to-1 gluten-free flour blend is your best friend. These blends typically contain a mix of rice flour, potato starch, tapioca starch, and xanthan gum, specifically formulated to mimic the properties of regular all-purpose flour in baking. This ensures your cookies have the right structure and chewiness without being crumbly. If gluten isn’t a concern, traditional all-purpose flour can be used as an alternative.
  • Vegan Butter: Essential for achieving a rich, buttery flavor and tender texture without any dairy. Plant-based butter sticks, like Country Crock Plant Butter or Earth Balance, work wonderfully in baking. Ensure your vegan butter is at room temperature before you begin, as this is crucial for proper creaming with the sugar.
  • Granulated Sugar: The foundation of any classic sugar cookie, granulated sugar provides sweetness and contributes to the cookie’s tender crumb. It also helps to create that slightly crisp edge that makes these cookies so satisfying.
  • Almond Milk: As our chosen plant-based liquid, almond milk (or any other dairy-free milk alternative like soy or oat milk) helps bring the dough together, ensuring it’s moist and pliable.
  • Peppermint Extract & Almond Extract: This dynamic duo creates the signature flavor profile of these holiday cookies. Peppermint extract delivers that cool, refreshing minty kick, while a touch of almond extract adds a subtle depth and warmth, perfectly complementing the chocolate.
  • High-Quality Cocoa Powder: To achieve a rich, deep chocolate flavor and color, opt for unsweetened cocoa powder. The quality of your cocoa can significantly impact the final taste, so choose a brand you love.
  • Cornstarch: In vegan baking, cornstarch often acts as a fantastic egg replacer. It helps to bind the ingredients, providing structure and contributing to a tender texture that prevents the cookies from becoming too delicate or crumbly.
  • Baking Powder: A crucial leavening agent that helps the cookies rise slightly and become soft.
  • Salt: A pinch of salt is vital to balance the sweetness and enhance all the other flavors, making the chocolate and peppermint truly pop.
  • Crushed Peppermint Candy (for topping): While optional, a generous sprinkle of crushed peppermint candy (like candy canes) on top of the frosting adds a delightful crunch, an extra burst of minty flavor, and an undeniable festive touch. It’s highly recommended for that classic holiday look and taste!

This recipe is lovingly adapted from my popular original vegan sugar cookie recipe. The core method remains the same, ensuring reliability and fantastic results. However, we’ve elevated it for the holidays by incorporating rich cocoa powder for that decadent chocolate base and a generous measure of peppermint extract to infuse every bite with cool, minty freshness. The result is a cookie that’s familiar yet excitingly new, perfect for celebrating the season.

Alright, that covers the delicious details for today! As always, I absolutely adore seeing your culinary creations. Tips for Perfect Chocolate Peppermint Cookies:

  • Room Temperature Ingredients: Ensure your vegan butter is softened to room temperature. This is crucial for creaming it properly with the sugar, creating a light and fluffy base for your dough. Cold butter won’t incorporate well, leading to a denser cookie.
  • Don’t Overmix the Dough: Once you add the dry ingredients to the wet, mix until just combined. Overmixing can develop the gluten in the flour (even in gluten-free blends) and lead to tough cookies. Stop as soon as the dough comes together.
  • Chill the Dough: This step is non-negotiable! Chilling the dough for at least 10 minutes (or longer) firms up the vegan butter, which prevents the cookies from spreading too much in the oven. It helps them maintain their cut-out shapes and intricate designs.
  • Flour Your Surface Lightly: When rolling out the dough, use a minimal amount of gluten-free flour on your work surface and rolling pin to prevent sticking. Too much flour can dry out the dough and make the cookies tough.
  • Even Thickness: Roll the dough to an even ¼-inch thickness. This ensures all cookies bake uniformly. Thicker cookies might be undercooked in the middle, while thinner ones might burn.
  • Cool Completely Before Frosting: Patience is key! Frosting warm cookies will cause the frosting to melt and slide off, making a mess. Allow the cookies to cool completely on a wire rack before applying frosting.
  • Get Creative with Cutters: The holidays are perfect for fun shapes! Use star, tree, snowflake, or bell-shaped cookie cutters to make your festive treats even more special.

Storage and Make-Ahead Options:

  • Storing Baked Cookies: Store frosted or unfrosted cookies in an airtight container at room temperature for up to 3-4 days. For longer storage, you can keep them in the refrigerator for up to a week.
  • Freezing Baked Cookies: Fully baked and cooled cookies (frosted or unfrosted) can be frozen for up to 2-3 months. Place them in a single layer on a baking sheet to freeze solid, then transfer to an airtight freezer-safe container or bag. Thaw at room temperature before serving.
  • Freezing Cookie Dough: You can prepare the dough ahead of time and freeze it. Wrap the disk of dough tightly in plastic wrap, then place it in a freezer-safe bag. It can be frozen for up to 3 months. Thaw in the refrigerator overnight before rolling out and baking as directed.

Variations to Explore:

  • White Chocolate Drizzle: Instead of, or in addition to, the frosting, drizzle melted vegan white chocolate over the cooled cookies for another layer of flavor and visual appeal.
  • Double Chocolate Peppermint: Fold in a handful of vegan chocolate chips or chunks into the dough before chilling for an extra chocolatey kick.
  • Extract Swaps: While peppermint and almond are classic, you could experiment with a hint of orange zest or espresso powder in the chocolate dough for a different twist.
  • Different Toppings: Beyond crushed peppermint, consider decorating with vegan sprinkles, finely chopped nuts, or a dusting of cocoa powder for an elegant finish.

These Chocolate Peppermint Cookies are truly the epitome of holiday cheer in edible form. Their rich, satisfying flavors, combined with the joy of baking a treat that caters to everyone, make them an essential addition to your holiday repertoire. Enjoy the process of creating these festive delights and the smiles they bring to your loved ones’ faces. Happy baking!

Ingredients

For the Cookies:

  • ½ cup (1 stick) vegan butter, room temperature
  • ½ cup granulated sugar
  • 3 tablespoons almond milk, or any milk alternative
  • 1 teaspoon peppermint extract
  • ½ teaspoon almond extract
  • 1 ½ cups gluten-free 1-to-1 flour, or regular all-purpose flour
  • ½ cup cocoa powder
  • 2 tablespoons cornstarch
  • ½ teaspoon baking powder
  • ¼ tsp salt

For the Frosting:

  • 1 stick of vegan butter, softened
  • 2 cups of powdered sugar
  • 1 teaspoon of vanilla extract, or swap for peppermint extract for extra mint
  • 1 teaspoon of plant-based milk, plus a bit more as needed to reach desired consistency
  • For topping: crushed peppermint candy

Instructions

  1. Preheat your oven to 350 degrees F (175 C) and line a large baking tray with parchment paper. This prevents sticking and ensures easy cleanup.
  2. In a medium bowl, whisk together the gluten-free flour, cocoa powder, cornstarch, baking powder, and salt. Set this dry mixture aside.
  3. In the bowl of a stand mixer fitted with a paddle attachment (or using an electric handheld mixer), beat the softened vegan butter and granulated sugar together for about 2 minutes, or until the mixture is light and fluffy. Scrape down the sides of the bowl, then beat for another minute to ensure everything is well combined and aerated. Stir in the almond milk, peppermint extract, and almond extract until just combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a cohesive dough forms. This usually takes about 2-3 minutes. Be careful not to overmix; stop as soon as the dough comes together.
  5. Transfer the dough to a lightly floured surface. Roll the dough out to an even ¼ inch thickness. Use your favorite cookie cutters to cut out shapes, then carefully transfer them to the prepared parchment-lined baking sheet, leaving about 1 inch between each cookie. Gather and re-roll any scraps until all the dough is used.
  6. Place the entire baking sheet with the cut-out cookies into the refrigerator for at least 10 minutes. This chilling step is essential for the cookies to maintain their shape and prevent excessive spreading during baking. Bake directly from the fridge.
  7. Bake for 10-12 minutes, or until the edges are just slightly golden. The cookies may still seem soft in the center but will firm up as they cool. Remove from the oven and let cool completely on the baking sheet before frosting.
  8. While the cookies cool, prepare the frosting. In a clean stand mixer bowl (or using a hand mixer), whisk the softened vegan butter on medium speed until light and fluffy, about 1 minute. Gradually add the powdered sugar, vanilla extract (or peppermint extract for a stronger minty frosting), and plant-based milk. Continue to mix until the frosting is smooth and fully combined, adding more milk a teaspoon at a time if needed to reach a spreadable or pipeable consistency.
  9. Once the cookies are completely cool, frost and decorate them as desired. Sprinkle with crushed peppermint candy for a festive finish. Enjoy your delicious homemade Chocolate Peppermint Cookies!
