- 6 large cloves of garlic, minced
- 2 medium jalapeños, seeded and finely chopped
- 2 teaspoons of cumin
- ½ teaspoon of cayenne pepper
- 3 cans of black beans, drained and rinsed
- 3 cups of vegetable stock
- ¾ cup fresh cilantro, chopped and divided in half
- 2 tablespoons of lime juice
- Salt & pepper to taste
- Optional: sriracha sauce and sour cream/plain Greek yogurt for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the finely chopped red onion and sauté for about 4 minutes until softened and translucent.
- Stir in the minced garlic and chopped jalapeños. Continue cooking and stirring for approximately 1 minute until fragrant.
