Delightful Vegan Strawberry Baked Donuts with Irresistible Glaze
Prepare to fall in love with these incredible Vegan Strawberry Baked Donuts! Bursting with fresh strawberry flavor and topped with a vibrant, naturally pink glaze, these donuts are a true delight. Not only are they incredibly delicious, but they’re also surprisingly simple to make, baking up perfectly in just about 15 minutes. Whether you’re a seasoned vegan baker or just starting your plant-based journey, this recipe promises a satisfying and scrumptious treat that will have everyone asking for more.

The journey to creating these delightful donuts began with a fun poll on social media, where I asked whether to bake strawberry muffins or donuts. Despite a strong leaning towards muffins, my heart, as always, led me to donuts! But fret not, for those who love muffins, this versatile batter can easily be adapted into delicious strawberry muffins. So, it’s truly a win-win situation for all strawberry dessert enthusiasts!
Why Choose Baked Donuts? The Healthier, Easier Alternative
While traditional fried donuts hold a special place in many hearts, baking offers a significantly lighter and less messy alternative without compromising on flavor or texture. Baked donuts are typically lower in fat and calories, making them a fantastic option when you’re craving a sweet treat but want something a bit healthier. The baking process also eliminates the need for large quantities of hot oil, making cleanup a breeze and the overall cooking experience much safer and more enjoyable. Plus, the tender, cake-like crumb of a baked donut is simply irresistible, especially when infused with the natural sweetness of fresh strawberries.

The Magic of Vegan Baking: Simple & Accessible Ingredients
One of the best aspects of this recipe is its fully vegan nature. Achieving a perfectly tender and moist donut without eggs or dairy might seem challenging, but with the right plant-based ingredients, it’s incredibly simple. This recipe relies on common pantry staples that are easy to find, proving that delicious vegan treats are accessible to everyone. We’ll be using a ripe banana as a natural binder and sweetener, plant-based milk for moisture, and a touch of nut butter to add richness and a lovely texture. These ingredients not only contribute to the donut’s structure but also add subtle layers of flavor that complement the strawberries beautifully.
This recipe builds upon my popular original Vegan Baked Donuts recipe, incorporating a few delightful twists. The most exciting alteration is, of course, the generous folding in of fresh strawberries into the batter, ensuring every bite is a burst of fruity goodness. And what’s a strawberry donut without an equally amazing strawberry glaze? We’re taking it up a notch with a vibrant, naturally colored glaze that uses the magic of powdered strawberries.
Crafting the Perfect Strawberry Glaze
The glaze for these donuts is nothing short of spectacular. It’s incredibly easy to whisk together and provides that perfect sweet, tangy finish. The secret to its beautiful pink hue and intense strawberry flavor lies in powdered strawberries. You have a couple of options here: you can either use store-bought powdered strawberries, which are readily available online or in specialty baking stores. Alternatively, you can create your own by pulverizing freeze-dried strawberry slices in a blender or food processor until they reach a fine powder consistency. Both methods work wonderfully, so use whichever is most convenient for you. This powdered berry addition not only enhances the flavor but also provides a gorgeous natural color, making these donuts as visually appealing as they are delicious.

Key Ingredients for Your Vegan Strawberry Baked Donuts
Creating these delightful treats requires a handful of simple, wholesome ingredients. Here’s a closer look at what goes into making them, along with some helpful tips and substitution ideas:
- Flour: I typically use all-purpose flour for a light and tender crumb. However, you can experiment with whole wheat pastry flour for a slightly nuttier flavor and added fiber, or a 1-to-1 gluten-free baking mix if you need a gluten-free option. Ensure your gluten-free mix contains xanthan gum for optimal texture.
- Maple Syrup: This serves as our primary sweetener, adding a lovely depth of flavor that granulated sugar can’t quite achieve. Agave nectar or even a good quality date syrup can be used as alternatives, though they may slightly alter the final flavor profile.
- Plant-Based Milk: Oat milk has been my go-to recently due to its creamy texture and neutral flavor, but almond milk, soy milk, or even cashew milk will work perfectly. Choose an unsweetened variety to control the overall sweetness of the donuts.
- Nut Butter: Peanut butter is a fantastic choice for its rich flavor and binding properties. However, almond butter, cashew butter, or even sunflower seed butter (for nut-free options) are excellent substitutes. Ensure it’s a smooth, creamy variety and not too stiff, as this can affect the batter consistency.
- Vanilla Extract: A crucial ingredient for enhancing all the other flavors and adding that classic baked goods aroma. Don’t skip it!
- Banana: A ripe, mashed banana is key here. It acts as an incredible natural binder, replacing eggs in traditional recipes, and also adds a touch of sweetness and moisture. While it does impart a faint banana taste, it blends beautifully with the strawberries. Ensure your banana is very ripe for the best results.
- Fresh Strawberries: Finely diced fresh strawberries are folded into the batter, creating delightful pockets of fruity goodness throughout the donut. While you could technically omit them, they truly elevate the flavor and texture of these baked donuts.
- Baking Soda & Baking Powder: These leavening agents work together to give our donuts their characteristic fluffy and light texture.
- Pinch of Salt: A little salt balances the sweetness and enhances all the flavors in the donut.

Effortless Donut Making: A One-Bowl Wonder
You’ll be thrilled to know that making these vegan strawberry baked donuts is incredibly simple, requiring just one large bowl for mixing! This minimizes cleanup and streamlines the entire process, making it perfect for busy mornings or an impromptu baking session.
The process begins by thoroughly mashing your ripe banana in a large bowl until only a few lumps remain. This ensures even distribution throughout the batter. Next, stir in the plant-based milk, your chosen nut butter, maple syrup, and vanilla extract until all the wet ingredients are well combined and smooth. Then, right on top of your wet mixture, sift in the dry ingredients: flour, baking soda, baking powder, and a pinch of salt. Sifting helps prevent lumps and ensures a light, airy texture. Gently mix everything together until just combined. Be careful not to overmix, as this can lead to tough donuts.
Finally, carefully fold in your finely diced fresh strawberries. This step adds those wonderful bursts of fruity flavor and vibrant color. Once the batter is ready, it’s time to pipe or spoon it into your greased donut tray. A piping bag with a round tip makes this task neat and easy, but a spoon will work just as well.
Pop them into the preheated oven for about 13-17 minutes, or until they’re golden brown and a toothpick inserted comes out clean. And that’s it for the baking! The hardest part, by far, is patiently waiting for them to cool before you can dive in and add that luscious strawberry glaze. Trust me, the wait is worth it!

Tips for Donut Perfection
- Donut Pan: A good quality non-stick donut pan is essential. If you don’t have one, silicone pans are fantastic as they make removal incredibly easy. Make sure to grease your pan thoroughly, even if it’s non-stick, to prevent sticking.
- Don’t Overmix: Overmixing the batter develops the gluten in the flour, leading to dense, tough donuts. Mix until just combined, even if a few small lumps remain.
- Piping Bag for Ease: For perfectly shaped donuts, transfer your batter to a piping bag (or a Ziploc bag with a corner snipped off) to fill the donut cavities. This is much neater and more efficient than spooning.
- Cool Completely: Resist the urge to glaze warm donuts! The glaze will simply melt off. Let them cool completely on a wire rack before dipping or drizzling.
- Glaze Consistency: The amount of warm water for the glaze can vary slightly depending on the humidity and how finely ground your strawberry powder is. Add water gradually, a half teaspoon at a time, until you reach your desired dipping consistency.

Prep: 10 mins
Cook: 15 mins
Total: 25 mins
Servings: 6 donuts

These strawberry donuts are baked up in just 20 minutes total and the strawberry glaze is delicious!
Ingredients
For the Donuts:
- 1 cup of flour (all-purpose, whole wheat, pastry flour, or a gluten-free 1–1 substitute)
- ½ teaspoon of baking soda
- 1 teaspoon of baking powder
- Pinch of salt
- ¼ cup of maple syrup
- ½ cup of plant-based milk (oat, almond, or soy work well)
- 3 tablespoons of nut butter (peanut butter, almond, or similar)
- 1 teaspoon of vanilla extract
- 1 medium banana, mashed
- ¼ cup of finely diced fresh strawberries
For the Glaze:
- 1 cup of powdered sugar
- ¼ cup of powdered freeze-dried strawberries (can be made by blending freeze-dried slices)
- 1 tablespoon of warm water (helps dissolve the strawberry powder)
Instructions
- Pre-heat oven to 350 degrees F (175°C). Lightly grease a 6-cavity donut pan with cooking spray.
- In a large bowl, mash the banana until smooth with few lumps. Stir in the plant-based milk, nut butter, maple syrup, and vanilla extract until well combined.
- Over the wet ingredients, sift together the flour, baking soda, baking powder, and salt. Mix everything together gently until just combined. Be careful not to overmix.
- Gently fold in the finely diced fresh strawberries.
- Evenly spoon or pipe the mixture into the 6 donut cavities in your prepared donut pan.
- Bake in the preheated oven for 13-17 minutes, or until golden brown and a toothpick inserted into the center of a donut comes out clean.
- Let the donuts cool slightly in the pan for 5 minutes, then carefully remove them and transfer to a wire rack to cool completely.
- While the donuts are cooling, prepare the glaze: In a small bowl, whisk together the powdered sugar, powdered freeze-dried strawberries, and 1 tablespoon of warm water until fully combined and smooth. If the glaze is too thick, add an additional ½ teaspoon of warm water at a time until you reach your desired consistency.
- Once the donuts are completely cool, dip each donut into the strawberry glaze, or drizzle the glaze generously on top. For a firmer glaze, place the glazed donuts in the fridge for a few minutes.
- Serve immediately and ENJOY!
Serving and Storage Suggestions
These delightful vegan strawberry baked donuts are best enjoyed fresh, ideally on the same day they are made. Their soft, cake-like texture and vibrant glaze make them perfect for breakfast, brunch, or an afternoon treat with your favorite cup of coffee or tea. You can also serve them at gatherings, baby showers, or any occasion where a charming, homemade dessert is appreciated.
If you have any leftovers, store them in an airtight container at room temperature for up to 2 days. For a slightly longer shelf life, you can store them in the refrigerator for up to 3-4 days, especially if your kitchen is warm. The glaze will firm up in the fridge, giving them a delightful chewiness. To enjoy them warm, a quick zap in the microwave for 10-15 seconds can bring back some of their fresh-baked softness.
Don’t hesitate to get creative with toppings! A sprinkle of extra freeze-dried strawberry pieces, a dusting of fresh powdered sugar, or even some vegan sprinkles can add an extra touch of charm and texture.
