The Joy of Savory Breakfast Crepes & Our Exciting New Family Addition!

I’m thrilled to share not one, but two exciting developments! First, a heartwarming update on our ever-growing family. And second, a deep dive into my recent culinary obsession: savory breakfast crepes. Get ready for a blend of fluffy, flavorful crepes and the delightful, chirping sounds of new life.

Our home has become a little fuller, a little louder, and a lot more adorable. The Britnell family is officially expanding by five new members!

Welcome to the Flock: Five Adorable Baby Chicks!

Five fluffy baby chicks exploring their new home

Yes, you read that right – we’ve welcomed five beautiful baby chicks into our lives this past Saturday, and I’ve been utterly captivated by them ever since. They bring such a unique charm and a promise of future farm-fresh delights. If you thought the “special announcement” was just about crepes, then consider yourself happily tricked! This news has brought an immense amount of joy and a flurry of activity to our household.

Close-up of baby chicks, two Rhode Island Reds and three Gold Sex Links

Among our new little feathered friends, two are spirited Rhode Island Reds, known for their robust health and excellent egg-laying capabilities. The other three are charming Gold Sex Links, a hybrid breed celebrated for their friendly demeanor and consistent production of large brown eggs. While convention might suggest otherwise, I firmly believe every creature deserves a name, and these little ones are no exception. I’m still gathering suggestions, so feel free to send your best ideas! The Golds are incredibly gentle and sweet; they’ll peacefully doze off in your hands within seconds. The two Reds, however, are considerably more energetic and feisty. They dart around with surprising speed for baby chicks, and one, easily identified by her distinct red beak, has already emerged as the confident leader of the flock – our resident “queen bee.”

Naturally, the most common question I’ve received is, “How are your dogs reacting to this new mini-farm?” It’s been quite the spectacle! Lexi, our sweet and curious dog, has completely fallen in love. Each morning, she eagerly waits by the garage door, tail wagging, ready to dash in and greet them with gentle, adoring licks. It’s a truly heartwarming sight. Zorro, on the other hand, presents a stark contrast. Despite his formidable size – he could inadvertently crush one with a paw and not even notice – he is utterly terrified of them! He maintains a respectful five-foot distance, only daring to approach if the gate to their enclosure is securely locked. Our 90-pound Zorro, it turns out, is a big softie, a gentle giant intimidated by a handful of fluffy chicks.

In approximately 20 weeks, these little birds will mature into laying hens, providing us with dozens of fresh, delicious eggs every single week. Imagine the possibilities! And when that time comes, I’m extending an open invitation to all of you to join us for a feast of these incredible Savory Breakfast Crepes, made with our very own farm-fresh eggs. Just be sure to bring the mimosas!

My Obsession with Homemade Savory Crepes

My passion for crepes was initially sparked by a truly delightful crepe spot right here in Nashville. Their creations were nothing short of addicting. The only downside? I couldn’t convince them to supply me with an endless, complimentary stream of their delicious offerings. So, like any good food enthusiast, I took matters into my own hands and started crafting them at home to satiate my cravings. What I discovered was a culinary revelation: crepes, despite their elegant and sophisticated appearance, are surprisingly simple to make.

The beauty of crepes lies in their dual appeal: they exude an air of culinary sophistication, making any meal feel special, yet they are incredibly easy to prepare. This combination makes them perfect for a leisurely weekend breakfast, an impressive brunch centerpiece, or even a light, satisfying dinner.

Crafting the Perfect Crepe Batter

The foundation of a great crepe is its batter, and thankfully, it’s a remarkably straightforward process. All the ingredients come together effortlessly in a blender. Simply combine your flour, milk, water, eggs, melted butter, a touch of salt, and a hint of sugar. Blend until the mixture is perfectly smooth and creamy, without any lumps. For an elevated savory note, I like to add a generous heaping teaspoon of fresh rosemary to the batter. This aromatic herb infuses the crepes with a subtle, earthy flavor that beautifully complements the savory fillings.

After blending, an essential step often overlooked is allowing the batter to rest. Covering the batter and letting it sit for at least 30 minutes, or even overnight in the refrigerator, allows the flour to fully hydrate and the gluten to relax. This resting period results in a more tender, less rubbery crepe with a finer texture, ensuring they cook beautifully thin and pliable. This simple step makes all the difference in achieving that delicate, melt-in-your-mouth quality.

Cooking Your Crepes to Golden Perfection

Once your batter is rested and ready, it’s time to cook. Begin by heating a lightly greased skillet over medium heat. A non-stick pan is ideal for this task. Once the pan is adequately hot, remove it briefly from the heat. This helps prevent the first pour of batter from setting too quickly and allows for an even spread. Pour approximately 1/2 cup of batter into the skillet – the exact amount will depend on the size of your pan, aiming for just enough to thinly coat the entire bottom. Immediately tilt and rotate the pan in a circular motion to ensure the batter spreads evenly into a thin, uniform layer. This swirling technique is key to achieving those signature delicate, paper-thin crepes. Return the pan to the heat and let it cook for about 3 minutes, or until the edges begin to crisp and the surface looks set. Then, with a gentle hand and a thin spatula, flip the crepe and cook for an additional 2-3 minutes on the other side until it’s beautifully golden brown. Repeat this process with the remaining batter, stacking the cooked crepes on a plate as you go.

Whipping Up the Savory Egg Scramble

While your crepes are cooking, you can simultaneously prepare the savory egg scramble. This is where the magic of improvisation comes in! I love making “throw-in-whatever-you-have-leftover-in-your-fridge” kind of eggs. It’s a fantastic way to utilize ingredients and minimize food waste. Start with whisked eggs, then add a large handful of lightly chopped spinach, a quarter cup of finely chopped bell pepper, and a quarter cup of diced onion. Sauté these vegetables until tender before adding the eggs and scrambling them to your desired consistency. Feel free to customize this with other favorites like mushrooms, cherry tomatoes, or a sprinkle of cheese. As a self-proclaimed multi-tasker, I find joy in orchestrating both components of this breakfast masterpiece at the same time!

Assembling Your Savory Breakfast Crepes

The final step is assembly, which is as satisfying as the cooking itself. Once your crepes are warm and your egg scramble is ready, it’s time to bring it all together. Take a warm crepe and spread a generous amount of creamy goat cheese over one half. The tanginess of the goat cheese provides a wonderful counterpoint to the rich eggs and delicate crepe. Next, spoon a hearty portion of your freshly cooked egg scramble on top of the goat cheese. Add slices of ripe avocado for a creamy texture and healthy fats. And for my personal touch – an obsessive amount of fresh cilantro. The bright, fresh notes of cilantro elevate all the flavors, bringing a vibrant finish to the dish. Fold the other half of the crepe over to create a beautiful, delicious breakfast pocket.

They represent the perfect fusion of elegance and ease, allowing you to create a truly gourmet breakfast right in your own kitchen. Whether you’re entertaining guests or simply treating yourself to something special, these crepes are guaranteed to impress.

Savory Breakfast Crepes with fresh ingredients, garnished

  • Prep Time: 30 minutes
  • Cook Time: 10 minutes
  • Total Time: 40 minutes
  • Servings: 4

Ingredients

For the Crepes:

  • 1 cup all-purpose flour
  • 1 cup milk
  • ½ cup lukewarm water
  • 4 large eggs
  • ¼ cup butter, melted (½ stick)
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • 1 heaping teaspoon fresh rosemary, finely chopped

For the Egg Scramble:

  • 4 eggs, whisked
  • 1 large handful fresh spinach, lightly chopped
  • ¼ cup chopped bell pepper (any color)
  • ¼ cup chopped onion
  • 2-4 tablespoons goat cheese, crumbled
  • Optional: avocado slices, fresh cilantro for topping

Instructions

  1. Combine all crepe ingredients (flour, milk, water, eggs, melted butter, salt, sugar, and rosemary) in a blender or food processor. Blend until the mixture is completely smooth and creamy, with no lumps remaining.
  2. Cover the batter and let it rest at room temperature for at least 30 minutes. For best results and more tender crepes, you can also refrigerate it overnight.
  3. Heat a non-stick skillet over medium heat. Lightly grease the pan with a small amount of butter or cooking spray.
  4. Once the pan is hot, remove it from the heat. Pour approximately ½ cup of batter into the center of the pan (adjust amount based on pan size to achieve a thin layer). Immediately tilt and rotate the pan in a circular motion to spread the batter evenly across the entire bottom surface.
  5. Return the pan to the heat. Cook for about 3 minutes, or until the edges begin to brown and the surface sets. Gently flip the crepe with a thin spatula and cook for an additional 2-3 minutes on the other side until lightly golden. Transfer the cooked crepe to a plate and repeat with the remaining batter.
  6. While the crepes are cooking, prepare the egg scramble. In a separate pan, sauté the chopped spinach, bell pepper, and onion until tender. Pour in the whisked eggs and cook, stirring occasionally, until the eggs are scrambled to your desired consistency.
  7. To assemble, take a warm crepe and spread goat cheese over one half. Spoon a portion of the egg scramble on top of the goat cheese. Add slices of fresh avocado and a generous amount of fresh cilantro.
  8. Fold the other half of the crepe over the filling and serve immediately. Enjoy your delicious savory breakfast crepes!
