Crafting Your Perfect Baked Gnocchi Casserole
This baked gnocchi casserole recipe is a symphony of flavors and textures, featuring tender gnocchi, earthy kale, sweet potato, and a rich, creamy cheese sauce, all baked to golden perfection. The process is straightforward, breaking down into a few simple steps that even novice cooks can master. First, the gnocchi is quickly cooked to al dente, requiring just minutes. Simultaneously, sweet potato and kale are gently sautéed, allowing the vegetables to soften and release their natural sweetness. The heart of this casserole lies in its luscious, cheesy sauce, which comes together quickly on the stovetop. Finally, all these delightful components are combined in a single casserole dish, generously topped with even more cheese, because, after all, the holidays are a time for a little indulgence, aren’t they?
Selecting Your Cheesy Delight
For this particular recipe, I opted for Gruyere cheese, which I’ve been thoroughly enjoying lately. Its nutty, slightly sweet, and robust flavor profile perfectly complements the other ingredients, creating a deeply satisfying dish. However, the beauty of a casserole lies in its adaptability. If Gruyere isn’t your preference or readily available, mozzarella is an excellent alternative, offering a classic mild flavor and fantastic melt. Feel free to experiment with any good melting cheese you love, such as cheddar, fontina, or even a blend, to customize the flavor to your liking. The goal is a rich, bubbly, golden-brown topping that enhances every bite.
To elevate the flavor further, I also added about 1/4 cup of freshly grated Parmesan cheese to the top. While not strictly necessary, having a block of good quality Parmesan in the kitchen is always a culinary advantage, and its sharp, salty notes provide a wonderful finishing touch. It’s a highly recommended addition that adds another layer of gourmet appeal to this already incredible dish.
A Festive Addition to Your Holiday Spread
Our Christmas dinner tradition typically revolves around a succulent roast, with side dishes rotating each year to keep things exciting. This year, the Baked Gnocchi Casserole is a definite contender, and I’m eagerly looking forward to preparing it again. Its hearty, comforting nature makes it an ideal accompaniment to any holiday main course, or even a delightful standalone vegetarian option. Beyond the holidays, this casserole serves as a fantastic, balanced meal for any weeknight. Its blend of carbohydrates, vegetables, and creamy goodness offers a fulfilling and delicious experience every time.
You can easily find the versatile and delicious range of Three Bridges foods at natural food stores and major grocery retailers nationwide. Baked Gnocchi Casserole
By Brita Britnell
- Prep Time: 15 mins
- Cook Time: 25 mins
- Total Time: 40 mins

Ingredients
- 24 ounces of Three Bridges Parmesan Gnocchi
- 4 cups packed chopped kale
- 1 sweet potato, peeled and diced into bite sized pieces
- 2 tablespoons of ghee or butter
- 4 cloves of garlic, minced
- 2 tablespoons of all purpose flour
- 1 cup of milk, any kind
- salt and pepper to taste
- 1 ½ cups of gruyere cheese, mozzarella also works great- divided
- ¼ cup of freshly grated parmesan- optional
Instructions
- In a large pot, cook the gnocchi according to packaging instructions.
- In a large skillet over medium heat, add in 1/2 cup of water and bring to a simmer. Add in the sweet potato and cook for 5 minutes, stirring frequently and adding additional water as needed (we’re steaming the potato a bit so that it’s lightly cooked before it goes in the oven). Add in the kale. The skillet will be rather full at this point but stir carefully and within a couple minutes, the kale will wilt and make it easier to stir. Season with a bit of salt and pepper. Once kale is fully wilted, remove from heat and drain any excess liquid.
- In a medium saucepan, melt the ghee/butter. Once hot, add in garlic and cook until fragrant and lightly brown, about 2 minutes. Whisk in flour and continue to whisk until combined and mixture thickens.
- Next whisk in milk and continue to whisk until mixture thickens, which takes a few minutes. Whisk in 2/3 cup of the cheese. Season mixture with salt and pepper to taste and remove from heat.
- In a casserole dish, combine the gnocchi, sweet potato, kale, and sauce. Mix until fully combined. Top with the remaining gruyere cheese as well as the parmesan cheese.
- Bake for 25 minutes. You can turn your broiler on for about 2 minutes at the end to brown up the cheese a bit, but this is not strictly necessary.
- ENJOY!
