The Foundation: Our Beloved Vegan Sugar Cookie Recipe

The magic of these rainbow beauties starts with my famous Vegan Sugar Cookie recipe. Seriously, it’s a go-to for a reason! The dough is incredibly forgiving, holds its shape beautifully, and bakes up into perfectly tender, buttery (without the butter!) cookies. For this Pride Flag rendition, I simply doubled the base recipe to ensure there was plenty of dough for all six vibrant colors, then added the necessary food coloring to transform it into our spectacular rainbow.

The inspiration for these eye-catching cookies came from a delightful discovery on Pinterest, originally by Hungry Rabbit. Their creative layered approach to rainbow cookies sparked the idea, and I simply adapted it to be completely vegan. While my cookies might not be absolutely perfect in every line and curve – a testament to the charming imperfections of homemade baking – I genuinely adore them. Each one tells a story of effort, love, and a dash of playful imperfection, making them even more endearing. 🥰🌈

These VEGAN Pride Cookies are simple to make and everyone loves them! Make a batch for someone you LOVE!

Ingredients

  • 1 cup vegan butter, (2 sticks), softened at room temperature
  • 1 cup granulated sugar
  • cup plant-based milk, (such as almond or soy), plus more as needed
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 4 cups all-purpose flour, plus extra for rolling out
  • ¼ cup cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Assorted gel food colorings (red, orange, yellow, green, blue, purple)

Instructions

  1. In a medium bowl, thoroughly whisk together the all-purpose flour, cornstarch, baking powder, and salt. Set this dry mixture aside for later use.
  2. In the bowl of a stand mixer fitted with a paddle attachment, or using an electric handheld mixer, beat the softened vegan butter and granulated sugar on medium speed for about 2 minutes, until the ingredients are well combined and creamy. Stop to scrape down the sides of the bowl with a spatula, then continue beating for another minute until the mixture is visibly light and fluffy. Add in the plant-based milk, vanilla extract, and almond extract, mixing on low speed until just combined. Be careful not to overmix at this stage.
  3. Gradually add the reserved dry ingredient mixture to the wet ingredients, mixing on low speed. Continue to beat for approximately 2-3 minutes until a cohesive, smooth cookie dough forms. The dough should be soft but not sticky.
  4. Divide the prepared dough into 6 equal portions. For best accuracy, I highly recommend using a kitchen scale to ensure each portion weighs the same. Using gel food colorings, dye each portion a distinct color for the rainbow flag: purple, blue, green, yellow, orange (mix yellow and red), and red. Knead the color into each dough ball until uniformly vibrant.
  5. Lightly flour a clean work surface or, for easier handling, place each colored dough portion between two large sheets of parchment paper. Roll out each color of dough into a rectangle measuring roughly 10 x 7 inches and a thickness just under ¼ inch. Once rolled, stack the sheets of dough on top of each other, keeping parchment paper between each color layer. Carefully transfer the stack to the refrigerator to chill for at least 30 minutes. This step is crucial for preventing the colors from bleeding and for easier handling.
  6. While the dough is chilling, preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking.
  7. Retrieve the chilled dough stack from the fridge. Carefully remove the parchment paper from between the layers and stack them directly on top of one another in the classic Pride Flag order: purple, blue, green, yellow, orange, and red. Place a fresh piece of parchment paper on top of the stacked dough and gently roll over it with a rolling pin. This light pressure helps to seal the layers together without distorting the colors.
  8. Using a sharp knife, carefully trim the edges of the stacked dough to create a perfectly clean, straight rectangle. Cut this large rectangle in half lengthwise, resulting in two long, rainbow-striped rectangles. Now, slice each long rectangle into individual cookies, approximately ⅓ inch thick. Arrange the sliced cookies on your prepared baking sheet, ensuring about 2 inches of space between each cookie. Return the baking sheet to the fridge for another 10 minutes of chilling. This final chill helps maintain the cookies’ shape during baking.
  9. Bake the cookies for 10-13 minutes, or until the bottoms are just barely beginning to turn golden brown. The cookies will puff up slightly during baking. Once baked, remove them from the oven and let them cool completely on the baking sheet before handling. Then, ENJOY your beautiful and delicious Vegan Pride Flag Sugar Cookies!

Pro Tips for Flawless Vegan Pride Flag Sugar Cookies

Achieving those perfectly crisp edges and vibrant, distinct layers in your Vegan Pride Flag Sugar Cookies is entirely within reach with a few expert tips:

  • Chilling is Key: Don’t skip the chilling steps! Chilling the dough firm ensures the cookies hold their shape, preventing spreading and maintaining those sharp, distinct color lines. Cold dough also makes rolling and handling much easier.
  • Even Rolling: Consistency in thickness is crucial for uniform baking and a neat appearance. Roll your dough between two sheets of parchment paper to prevent sticking and achieve an even thickness without adding too much flour.
  • Gel Food Coloring for Vibrancy: While liquid food coloring works, gel food coloring provides much richer, more concentrated colors without significantly altering the dough consistency. This ensures your rainbow truly pops!
  • Gentle Stacking and Sealing: When stacking the colored doughs, be precise in aligning the edges. A light pass with a rolling pin after stacking is enough to seal the layers without merging the colors.
  • Sharp Knife for Clean Cuts: Use a very sharp knife to trim the edges and slice the cookies. This prevents drag and smudging, giving you clean, defined stripes.
  • Don’t Overbake: Vegan sugar cookies, like their traditional counterparts, are best when just baked through. Look for a very slight browning on the edges. Overbaking can make them dry and crumbly.

Creative Variations and Serving Suggestions

While the classic Pride Flag design is beautiful, feel free to get creative! Here are a few ideas to customize your Vegan Pride Sugar Cookies:

  • Different Flag Designs: Adapt the colors to represent other flags within the LGBTQ+ community, such as the Progress Pride Flag (adding black and brown stripes, and light blue, pink, and white for trans pride), or the Lesbian, Bisexual, or Transgender flags.
  • Glaze or Frosting: For an extra touch of sweetness, consider a simple vegan glaze made from powdered sugar and a splash of plant-based milk or lemon juice. You could also use vegan royal icing for more intricate decorating.
  • Sprinkle Fun: Add a dusting of edible glitter or rainbow sprinkles before baking or after glazing for extra sparkle and festivity.
  • Cookie Cutters: Instead of slicing into rectangles, you could use cookie cutters to create shapes like hearts, stars, or even small hands, then arrange the colorful dough strips within the cutters before baking.
  • Flavor Boosts: Experiment with extracts beyond vanilla and almond. A touch of lemon zest or orange extract can add a bright, fresh dimension to your cookies.

Frequently Asked Questions About Vegan Pride Cookies

Here are answers to some common questions you might have while baking these delightful cookies:

Can I make these cookies gluten-free?
While this recipe uses all-purpose flour, you can often substitute with a good quality 1:1 gluten-free baking flour blend that contains xanthan gum. Results may vary slightly in texture, but many bakers have success with this substitution.
What’s the best type of vegan butter to use?
For baking, stick vegan butter (in stick form, not tub) tends to work best as it has a lower water content and behaves more like dairy butter. Brands like Miyoko’s Kitchen or Earth Balance sticks are excellent choices.
How do I prevent the colors from bleeding?
Thorough chilling of the individual dough layers and the final stacked dough is crucial. Ensure your dough is firm before stacking and cutting. Also, avoid overworking the dough, which can warm it up and encourage colors to blend.
How long do these cookies stay fresh?
These Vegan Pride Flag Sugar Cookies will stay fresh in an airtight container at room temperature for up to 5-7 days. For longer storage, you can freeze the baked cookies for up to 3 months. Thaw at room temperature before serving.
Can I prepare the dough ahead of time?
Absolutely! You can prepare the individual colored doughs and store them, tightly wrapped, in the refrigerator for up to 3 days. When ready to bake, let them come to a slightly more pliable temperature (not fully room temp) before rolling and stacking.
