Happy Monday, food lovers! I’m still buzzing from an exciting yet wonderfully exhausting weekend, having just celebrated Jemma’s first birthday. It feels like just yesterday she was a newborn, and now she’s officially one! Time truly flies when you’re having fun. We hosted a lovely gathering with close family and friends, and it’s safe to say Jemma had an absolute blast. As for me, I channeled my inner DIY enthusiast and crafted some adorable decorations that turned out even better than I imagined!

Beyond the festive toppers, I also baked a separate smash cake just for Jemma, and she absolutely adored it. She’s currently in this delightful phase where she loves to share everything with those around her. Watching her take tiny pieces of cake and offering them to everyone was simply the cutest thing. Her generosity warmed all our hearts!

Now, let’s shift our focus to something equally heartwarming and utterly delicious: this incredible Instant Pot Mexican Rice. It’s not just quick to prepare; it’s incredibly easy, bursting with flavor, and has quickly become a staple in my kitchen. If you’re looking for a fuss-free side dish that’s both healthy and satisfying, you’ve found your new go-to recipe.

Simple and Flavorful Instant Pot Mexican Rice - Perfect for Any Meal

One of the biggest advantages of this recipe is that you won’t need to dirty multiple pots and pans. Everything comes together in your Instant Pot, making cleanup a breeze. That’s always a win in my book, especially after a busy day or a festive weekend!

Why You Need This Instant Pot Mexican Rice in Your Life

Mexican rice, often known as “arroz rojo” for its signature reddish hue, is a beloved staple in many cuisines. Traditionally, it involves a bit of stovetop simmering and careful timing. However, with the magic of the Instant Pot, this classic dish is transformed into a convenient, one-pot wonder that delivers consistent results every time. Forget about sticky bottoms or undercooked grains; your pressure cooker handles it all with precision.

This recipe is not only incredibly fast but also perfectly suited for modern lifestyles. Whether you’re a busy parent, a student, or simply someone who appreciates efficiency in the kitchen, the Instant Pot makes homemade Mexican rice accessible to everyone. Plus, it’s naturally vegetarian and vegan, making it an excellent choice for diverse dietary needs without compromising on flavor or texture. Its robust, savory profile makes it the ideal accompaniment to a wide array of dishes.

How to Master Instant Pot Mexican Rice

Preparing this flavorful Mexican rice in your Instant Pot couldn’t be simpler. The process begins with a quick sauté, which is essential for building a deep, rich flavor foundation. I start by activating the sauté function on my Instant Pot and heating a bit of olive oil. Once shimmering, I add finely chopped onions, letting them cook until they become beautifully translucent and fragrant. This step softens their sharpness and brings out their natural sweetness, adding a crucial layer of flavor to the rice.

Cooking Instant Pot Mexican Rice: Sautéing Aromatics First

Next, I introduce minced garlic to the pot, allowing it to cook for just an additional minute until its aromatic scent fills the kitchen. It’s important not to burn the garlic, as this can impart a bitter taste. After the aromatics are perfectly cooked, the rest of the ingredients come into play. Turn off the sauté function to prevent any burning, then simply dump in the vegetable broth, tomato sauce, chili powder, paprika, cumin, salt, pepper, and most importantly, the uncooked white rice. I personally prefer a long-grain rice like basmati or jasmine for its fluffy texture, but any long-grain white rice will work wonderfully here.

Give everything a good stir to combine all the ingredients evenly. Then, it’s time to seal the Instant Pot. Ensure the lid is securely in place and the pressure release valve is set to the “sealing” position. Set your Instant Pot to manual or pressure cook mode for a mere 8 minutes. This short cooking time under pressure is what makes the rice so incredibly tender and perfectly cooked, absorbing all the delicious flavors.

Now, all that’s really left to do is wait for the magic to happen. While your Instant Pot is working its wonders, you might want to whip up some delicious accompaniments. For instance, these vegan crispy “chick’n” tacos are an absolutely perfect pairing. Seriously, they’re a must-try!

Once the Instant Pot signals that it’s finished cooking, carefully perform a quick release of the pressure. This means manually turning the valve to the “venting” position to release the steam. Be cautious as the steam will be hot! Once all the pressure has been released and the float valve drops, you can safely open the lid. Give the rice a gentle fluff with a fork to separate the grains and release any remaining steam. This step also helps to achieve that light and airy texture we all love.

And THAT’S IT! Your flavorful, perfectly cooked Instant Pot Mexican Rice is ready to be served. Garnish with fresh cilantro and a squeeze of lime for an extra burst of freshness if desired.

The Versatility of Your Instant Pot

If you don’t already own an Instant Pot, I cannot recommend it highly enough. It’s truly a game-changer in the kitchen, especially if, like me, you enjoy cooking rice regularly. Instant Pot rice consistently turns out perfect – fluffy, evenly cooked, and never mushy or dry. But its utility extends far beyond just rice. This multi-functional appliance can sauté, pressure cook, slow cook, steam, and even make yogurt. There’s virtually no limit to what you can create with it once you start experimenting and get a little creative! It streamlines meal prep, saves time, and significantly reduces cleanup, making healthy, home-cooked meals more achievable on even the busiest days.

Ingredients

  • 1 ½ tablespoons of olive oil
  • ½ cup of sweet onion, finely chopped
  • 1 clove of garlic, minced
  • 2 cups of vegetable broth
  • ½ cup of tomato sauce
  • ½ teaspoon of chili powder
  • ½ teaspoon of paprika
  • ½ teaspoon of cumin
  • ½ teaspoon of salt
  • Pepper to taste
  • 1 cup of uncooked white rice, I prefer a long grain such as basmati

Instructions

  1. Using the sauté function on your pressure cooker, heat the olive oil until hot. Add the finely chopped onion and cook for about 3 minutes, stirring occasionally, until the onion becomes translucent and softens. Add the minced garlic and cook for an additional minute until fragrant, being careful not to let it brown or burn.
  2. Turn the pressure cooker to the “off” setting to stop the sauté function. Stir in the remaining ingredients: vegetable broth, tomato sauce, chili powder, paprika, cumin, salt, pepper to taste, and the uncooked white rice (such as basmati). Ensure everything is well combined.
  3. Secure the lid on your Instant Pot and set the pressure release valve to the “sealing” position. Select the “Manual” or “Pressure Cook” setting and set the cooking time for 8 minutes on high pressure.
  4. Once the cooking cycle is complete, carefully perform a quick release of the pressure by turning the valve to the “venting” position. Once all the steam has escaped and the float valve has dropped, open the lid. Gently fluff the rice with a fork to separate the grains and serve immediately. Enjoy your perfectly cooked, flavorful Mexican rice!
