  • 3 tablespoons of parmesan cheese, shredded
  • ⅛ cup of fresh parsley, chopped
  • ¼ tablespoon of dried oregano
  • ¼ teaspoon of salt
  • 2 cloves of garlic, minced
  • ¼ teaspoon of black pepper
  • 1 fresh egg

Zucchini Rolls:

  • 2 medium-large zucchinis
  • Salt for sprinkling (optional, but recommended for drawing out moisture)
  • ½ cup of your favorite pasta sauce (adjust based on desired “sauciness”)
  • ½ cup of mozzarella cheese, shredded or in small chunks

Instructions

  1. Pre-heat your oven to 375 degrees F (190 degrees C).
  2. To make the ricotta filling: Add all of the ricotta filling ingredients (ricotta cheese, cottage cheese, parmesan cheese, fresh parsley, dried oregano, salt, minced garlic, black pepper, and fresh egg) into a food processor or blender. Blend until the mixture is creamy and smooth. Once blended, place the filling in the refrigerator until you are ready to use it.
  3. Prepare the zucchini: Using a mandoline slicer or a very sharp knife, carefully cut your zucchinis into long, thin strips, aiming for about 1/4 inch thick each. Reference the photos above for visual guidance on ideal thickness. You should yield approximately 4-5 usable strips per zucchini, depending on its size. Arrange the zucchini strips in a single layer on a lightly greased baking sheet. Lightly spray the tops of the strips with cooking spray, then sprinkle them with a pinch of salt (this helps draw out additional moisture and seasons the zucchini).
  4. Broil the zucchini: Turn your oven’s broiler setting on. Carefully place the baking sheet with zucchini under the broiler. Broil the zucchini until the tops begin to lightly brown and soften.   5. Assemble the rolls: In a large baking dish (such as an 8×8 or 9×13 inch dish, depending on the number of rolls), spread half of your favorite pasta sauce evenly across the bottom.
  6. Take one cooled zucchini strip at a time. Spread about 1 heaping tablespoon of the prepared ricotta mixture evenly across the entire surface of the zucchini strip. Starting from one end, carefully roll the zucchini strip into a tight coil. Place the rolled zucchini, seam-side down, into the prepared baking dish. Repeat this process until all of the zucchini strips are filled and rolled. Evenly spoon the remaining pasta sauce over the tops of each zucchini roll. Finally, sprinkle the mozzarella cheese generously over all the rolls.
