This vegan skillet cookie is super simple to make and SUCH a delicious comfort food! Best enjoyed with a big scoop of ice cream 😀

  • ½ cup vegan butter, 8 tablespoons, softened* (1/2 cup of coconut oil will also work well here!)
  • ½ cup light brown sugar, packed
  • ½ cup white sugar
  • ¼ cup plant based milk, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour*
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup vegan chocolate chips, additional for topping (For this skillet, I like to use a combo of chips and chunks of chocolate!)
  • For serving: ice cream, not necessary but HIGHLY recommended

Instructions

  1. Pre-heat the oven to 350 degrees F (175°C) and generously grease a 10-12 inch oven-safe skillet with vegan butter or cooking spray.
  2. In a stand mixer fitted with the paddle attachment (or a large bowl with an electric hand mixer), cream together the softened vegan butter, light brown sugar, and white sugar until light and fluffy. Once fully combined, add in the room temperature plant-based milk and vanilla extract, mixing until just incorporated. The mixture may appear slightly curdled at this stage, but don’t worry, it’s perfectly normal!
  3. Gradually add the all-purpose flour, baking powder, baking soda, and salt to the wet ingredients. Mix on low speed until the dry ingredients are just combined with the wet, being careful not to overmix. Gently fold in the vegan chocolate chips (and chunks, if using). The dough will be a little sticky, but it shouldn’t adhere excessively to your hands. If it feels too sticky to handle, you can mix in a tiny bit of extra flour, one tablespoon at a time.
  4. Carefully transfer the cookie dough into your prepared skillet. Using a spatula or your hands, spread the dough out evenly to cover the bottom of the skillet.
