I worked on this recipe a long time to very closely mimic a Chipotle burrito bowl. I love how it turned out! So perfect, fully vegan, versatile and packed with great healthy veggies and flavors!

Ingredients

  • 1 ear of corn, grilled or baked (could also use 1 can of sweet corn instead)
  • 2 cups uncooked rice, I use white but brown will also work just fine
  • ½ cup cilantro, chopped. plus extra for topping
  • Juice and zest of 1 lime
  • 1 bell pepper, thinly sliced
  • ½ red onion, thinly sliced
  • 1 teaspoon oil, I typically use olive oil or coconut oil
  • ½ teaspoons oregano
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 can black beans, drained and well rinsed
  • 2 cups leaf lettuce, thinly sliced
  • optional for topping: guacamole, pico de gallo, vegan sour cream, vegan cheese, wedges of lime, fresh salsa, hot sauce.

Instructions

  • Prepare the Corn: If you’re using fresh corn on the cob, pre-heat your oven to 350°F (175°C). Bake the corn cob for about 20 minutes until tender and slightly roasted. Once it’s out of the oven, allow it to cool slightly, then carefully cut the kernels from the cob. If using canned corn, simply drain and rinse it, and set aside.
  • Cook the Rice: While the corn is baking (or while preparing other ingredients if using canned corn), cook your rice according to package directions. I typically use a rice cooker for perfect results, but a pot on the stovetop works just as well. Aim for fluffy, separated grains.
  • Sauté the Vegetables: Approximately 10 minutes before your rice and corn are finished, begin sautéing the bell peppers and red onion. In a large skillet over medium heat, add 1 teaspoon of oil. Once hot, add the thinly sliced peppers and onion. Sauté for about 5 minutes until they begin to soften. Then, stir in the oregano, cumin, garlic powder, and paprika.
