Embrace the Cozy Comfort of Homemade Apple Pie Cinnamon Rolls This Autumn
The crisp air, the golden hues of changing leaves, and the undeniable aroma of autumn spices – it’s official, I’ve fully embraced the reality of fall. Even if some days in Nashville still surprise us with a stubborn 90-degree heat, my kitchen has firmly transitioned into a haven of autumnal delights. This past weekend, my culinary adventures led to the creation of these absolutely divine Apple Pie Cinnamon Rolls, and my home became a fragrant sanctuary thanks to a generous burning of fall-scented candles. Bath & Body Works has, once again, outdone itself, offering an impressive array of pumpkin variations. From the intriguing cranberry pumpkin (currently flickering beside me as I type) to the classic sweet cinnamon pumpkin, the refreshing pumpkin apple, and the comforting plain pumpkin pie, my senses are in a constant state of autumnal bliss. It’s truly remarkable how many ways one can interpret the humble pumpkin scent, and believe it or not, this only represents about a third of their seasonal offerings! The thought has crossed my mind more than once: does my house *really* need the Pumpkin Pecan Waffles candle? Perhaps not, but oh, the temptation! Though, for the record, my all-time favorite fall candle remains “Sweater Weather” – its clean, cozy aroma perfectly captures the essence of a cool autumn day. But I’m getting ahead of myself, let’s steer back to the star of today’s show.

Why These Apple Pie Cinnamon Rolls Are Your Ultimate Fall Indulgence
Ah yes, these glorious Apple Pie Cinnamon Rolls! They are more than just a breakfast treat; they are a celebration of fall, a symphony of flavors that evoke warmth, comfort, and nostalgia. Last year, I crafted a beloved Apple Pie French Toast, and I knew that 2015 demanded its own signature apple-pie-themed breakfast creation. The vision was clear: plump, juicy apples nestled within soft, cinnamon-spiced dough. Ideally, these apples would be hand-picked from a local orchard, an annual tradition I cherish. However, despite my best intentions, time slipped away this week, so the beautiful apples gracing these rolls came from the grocery store. But fear not, next weekend, a joyful excursion to an apple orchard is definitely on the agenda. There’s an undeniable charm and a unique flavor that comes from baking with fruit you’ve gathered yourself, adding an extra layer of love and connection to every bite of your homemade creations.
The Secret to Quick Cinnamon Roll Bliss: No More Long Waits!
Another crucial element I wanted to achieve with this recipe was speed. Let’s be real, who has an hour and a half to wait for dough to rise at 7 in the morning, especially when your stomach is rumbling and your Saturday is brimming with exciting plans? My patience, especially before coffee, is limited, and I suspect many of you can relate. That’s why I set out to create a cinnamon roll recipe that delivers all the incredible taste and texture of traditional rolls but in a fraction of the time. For the foundation of this recipe – the incredibly pliable and delicious dough – I adopted Joy the Baker’s genius “quick and dirty” cinnamon roll recipe. It’s a game-changer not only because it shaves precious minutes off the preparation process but also because it yields a perfectly manageable batch of six cinnamon rolls. This size is ideal for serving 3-4 people comfortably, or for two truly ravenous individuals who might want to enjoy a second (or third!) helping. It makes these homemade delights accessible for any weekend morning, without feeling like an all-day baking project.
Crafting Your Perfect Batch: A Detailed Guide to Apple Pie Cinnamon Rolls
Let’s begin the exciting journey of bringing these magnificent Apple Pie Cinnamon Rolls to life. The dough itself is remarkably cooperative and comes together quite quickly. After a swift mixing, it’s left to rest for a mere ten minutes. This short but essential pause allows the gluten to relax, making the dough much easier to roll out and preventing it from shrinking back. While your dough is taking its brief siesta, you’ll have just enough time to prepare the fragrant apple and cinnamon filling, setting the stage for the deliciousness to come. This efficient workflow is key to the “quick” aspect of this recipe, proving that you don’t need hours to create something truly spectacular.
Preparing the Dough and the Aromatic Filling
Once the dough has enjoyed its brief rest, it’s time to roll it out. Aim for a rectangle approximately 12 inches by 9 inches – precision isn’t paramount, but a generally rectangular shape will make for easier rolling. Next, generously spread the dough with softened butter, ensuring an even layer that will contribute to the rolls’ tender texture and rich flavor. Over this buttery canvas, sprinkle a lavish amount of brown sugar and ground cinnamon. This classic combination creates the sticky, sweet, and warmly spiced interior that is the hallmark of an exceptional cinnamon roll. The aroma alone as you sprinkle these spices will ignite your senses and anticipation.
Layering in the Apple Pie Goodness
Now, for the “apple pie” part of these incredible rolls! Evenly distribute what might initially seem like an overwhelming amount of finely diced Granny Smith apples over the cinnamon-sugar mixture. Don’t be shy; trust the process! These apples will soften and meld beautifully into the rolls as they bake, releasing their sweet-tart juices and creating pockets of tender, spiced apple goodness within each swirl. The slight tartness of the Granny Smith apples is crucial here, as it perfectly balances the sweetness of the brown sugar and the warmth of the cinnamon, elevating the entire flavor profile to truly resemble a comforting slice of apple pie.
Rolling, Slicing, and the Anticipatory Rise
With the dough magnificently layered, it’s time to roll! Using firm yet gentle hands, begin rolling the dough lengthwise, starting from one of the longer sides. The key is to roll it up tightly, ensuring that the apples and filling remain snugly tucked inside. A few apple pieces might attempt a daring escape from the sides – simply nudge them back into any available opening. Once you have a perfectly tight log, it’s time to slice. For consistently even rolls, a great trick is to first cut the log exactly in the middle, then cut each half in half, and finally, cut each of those quarters into three equal rolls. This method helps ensure all your cinnamon rolls bake evenly and look beautifully uniform.
Carefully place your freshly sliced rolls into a greased skillet or baking pan, leaving about half an inch of space between each roll to allow for expansion. Cover them loosely with cling film or foil and let them rest for another 30 minutes. This crucial second rise will allow the rolls to puff up even further, becoming incredibly light and fluffy as they prepare for their time in the oven. This 30-minute window is your perfect opportunity to brew a generous pot of coffee, pour yourself a large, steaming mug, and perhaps scroll through your social media or simply enjoy a quiet moment of anticipation. The fragrant promise emanating from the kitchen will be your reward!
Baking to Golden Perfection and the Essential Glaze
As the final rise nears its end, preheat your oven to 350 degrees Fahrenheit. Once ready, uncover your rolls and slide them into the oven. In approximately 18-22 minutes, these humble dough swirls will transform into beautifully golden-brown, irresistibly fragrant Apple Pie Cinnamon Rolls. Keep a close watch around the 18-minute mark; you’re looking for that perfect golden hue on top and a springy texture when gently pressed. The aroma wafting from your oven will be nothing short of intoxicating, filling your entire home with the sweet, spiced scent of autumn baking. Once baked to perfection, allow them to cool slightly before the final, glorious step.
In my humble opinion, these Apple Pie Cinnamon Rolls are incredibly delicious and perfectly juicy all on their own, straight from the oven. The natural sweetness of the apples, combined with the rich cinnamon and brown sugar, creates a moist and flavorful interior that truly needs no adornment. HOWEVER, I completely understand and respect the belief that a cinnamon roll simply *must* have a glaze. And for that, I grant permission! I crafted a super simple, thin glaze that adds a delicate sweetness and a beautiful sheen without overwhelming the primary flavors. It’s just enough to make them feel extra special and decadent. Drizzle it generously over the warm rolls, letting it melt slightly into every crevice, creating an absolutely irresistible treat.
A Pro Tip for Your Apples: To Caramelize or Not?
One important consideration that’s worth noting: I chose not to caramelize my diced apples before adding them to the cinnamon rolls. In my experience, they cook beautifully within the rolls themselves, softening and becoming wonderfully cinnamony and juicy in the oven. The natural moisture and sugars release during baking, creating a truly delicious, almost saucy interior. However, if you prefer a slightly drier, more intensely flavored apple filling with less moisture, the traditional approach involves cooking your diced apples for a few minutes over low heat in a small saucepan with a tablespoon of sugar and a dash of cinnamon. This pre-cooking step helps to draw out some of the excess moisture. While I skipped it and was thrilled with the moist, tender result, I wanted to provide this option so you can tailor your Apple Pie Cinnamon Rolls to your personal preference. Experiment and find what works best for you!
Essential Tips for Cinnamon Roll Perfection
- Perfect Dough Consistency: When mixing your dough, aim for a soft, slightly tacky texture. If it’s too sticky, add flour one tablespoon at a time. If it’s too dry, a tiny bit of milk can help.
- Don’t Over-Knead: For the most tender rolls, avoid overworking the dough. A brief knead (30 seconds in a stand mixer or a few turns by hand) is sufficient to develop enough gluten for structure without making the rolls tough.
- Room Temperature Ingredients: Ensure your milk, butter, and egg yolk are at room temperature. This helps the yeast activate properly and allows the ingredients to combine more smoothly, resulting in a more uniform dough.
- Even Rolling: Try to roll your dough into as even a rectangle as possible. This ensures that each cinnamon roll has a consistent amount of filling and bakes uniformly.
- The Art of Rolling Tight: When rolling the dough into a log, make sure it’s tight. A tight roll prevents gaps in your finished cinnamon rolls and keeps the filling neatly contained within each swirl.
- Serve Warm for Best Experience: These Apple Pie Cinnamon Rolls are undeniably at their absolute best when served warm, ideally fresh from the oven or gently reheated. The soft dough, gooey filling, and melted glaze are truly irresistible.
- Storage Suggestions: If you happen to have any leftovers (a rare occurrence!), store them in an airtight container at room temperature for up to 2-3 days, or in the refrigerator for up to a week. Reheat gently in the microwave for a few seconds or in a warm oven for a few minutes to bring back their fresh-baked charm.

Ingredients
For dough:
- ½ cup of milk
- 2 tablespoons of unsalted butter
- 2 tablespoons of sugar
- 1 ½ teaspoons of active dry yeast
- 1 ½ cups all-purpose flour, plus a bit more if necessary
- ¼ teaspoon of salt
- 1 large egg yolk
For the filling:
- 2 medium granny smith apples, diced into small pieces
- optional, see instructions below: 1 tablespoon of sugar
- ½ cup of brown sugar
- 2 teaspoons of cinnamon
- 3 tablespoons of butter, softened but not completely melted
For the glaze:
- ¾ cup of powdered sugar
- 1-2 tablespoons of cream/ milk
Instructions
-
In a small saucepan, over medium heat, mix together the milk, 2 tablespoons of butter, and sugar. Stir frequently until everything is dissolved and combined, which will only take a couple of minutes. Remove from heat and let cool slightly.
-
Once cooled for about 5 minutes, add the mixture into a large bowl or the bowl of a stand mixer. Stir in the yeast and let sit for 5 minutes to activate the yeast.
-
Using the dough hook of your stand mixer or hand mixer, gently stir in the flour, salt, and egg yolk to the yeast mixture. Beat until fully combined. If the dough is too sticky, add more flour one tablespoon at a time.
-
Knead the dough a few times. This can be done with a stand mixer (knead for just about 30 seconds) or by hand. Place the dough back in the bowl, cover, and let sit for 10 minutes.
-
**OPTIONAL (see note above): While the dough sits, prepare the apples by combining them in a medium saucepan with 1 tablespoon of white sugar. Heat over medium-low heat, stirring frequently, for about 3-4 minutes. Take off the heat and set aside to cool.
-
*Alternatively, the apples can be added to the cinnamon rolls as is and baked raw.
-
In a small bowl, stir together the brown sugar and cinnamon and set aside.
-
Roll the dough out to a rectangle that is about 12 inches by 9 inches, though it doesn’t need to be exact.
-
Making sure to leave about 1/2 an inch of dough around the edges uncovered by any of the filling, cover the dough with the 3 tablespoons of softened butter and then evenly sprinkle the brown sugar and cinnamon mixture over top. Top with the apples.
-
Very gently, yet firmly, roll the dough long ways until it’s tightly rolled all the way up. Cut the dough into 6 rolls (I recommend starting in the center so your rolls are even).
-
Place the rolls in a greased pan or skillet, leaving about 1/2 an inch in between each one. Cover and let sit for about 30 minutes to rise a bit more.
-
Near the end of the rising, pre-heat your oven to 350 degrees F.
-
Uncover the rolls and bake in the oven for 18-22 minutes, checking towards the 18-minute mark for doneness. They’re done when the dough has a nice golden brown color. Once done, let cool slightly.
-
Make your glaze by whisking together the powdered sugar and 1 tablespoon of the cream/milk. Only add more cream if the glaze is too thick.
-
Top the warm cinnamon rolls with the glaze and ENJOY!!! These are definitely best served warm!
