Gingerbread Cake with Brown Sugar Buttercream Frosting

Ingredients
For Chocolate Trees:
- 6 ounces of dark chocolate
For cake:
- 2 ½ cups all-purpose flour, plus more for the pans
- 2 ½ tablespoons of Gingerbread Spice
- ½ teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 8 tablespoons (1 stick) unsalted butter, room temperature
- ⅔ cup packed light brown sugar
- 1 cup hot water
- 1 cup unsulfured molasses
- 2 large eggs, room temperature

Instructions
For the Trees:
- In a double boiler, melt chocolate. Set aside to cool slightly, about 3-4 minutes. Prepare your surface by placing tin foil neatly over a large, flat baking sheet.
- Pour the chocolate into a plastic baggy and cut off one corner of the baggy about 1/8th of an inch.
- Pipe the trees out onto the foil until you have your desired number of trees. I made 4 trees each of 3 different sizes.
- Place the tray in the fridge for at least 30 minutes to allow the chocolate to re-harden.
For the Cake:
- Pre-heat oven to 325 degrees F. Butter three 6-inch round cake pans or two 8-9-inch pans. Lightly flour the buttered pans, tapping out any excess.
- In a large bowl, sift together the flour, gingerbread spice, salt, baking powder, and baking soda. Set aside.
- In a stand mixer with the paddle attachment, cream the unsalted butter until it’s light and fluffy. Then, beat in the packed light brown sugar, continuing to beat until the mixture is airy. Gradually beat in the hot water, followed by the unsulfured molasses. Finally, add the dry flour mixture to the wet ingredients, mixing until just combined. Beat in the large eggs one at a time until fully incorporated.
- Pour the cake batter evenly into the prepared cake pans. Bake for 30-40 minutes, depending on the size of your pans. Begin checking for doneness at 30 minutes by inserting a toothpick into the center of a cake. If it comes out clean, the cake is ready.
- Allow the cakes to cool in their pans for a few minutes before inverting them onto wire racks. Let them cool completely on the wire racks for about 20 minutes (or longer if needed) before beginning the assembly process.
- Assemble the cake by placing the first cooled layer on your serving plate or cake stand. Spread a generous portion of the Brown Sugar Buttercream evenly over the top. Carefully place the second cake layer on top, repeating the frosting process. Add the third layer (if applicable) and then proceed to generously frost the entire cake, working your way around the sides and top.
- Once the cake is fully frosted, neatly arrange your chilled chocolate trees around the cake. Position them with their flat sides (the side that was directly touching the foil) facing away from the cake for a more three-dimensional effect.
