- 1 cup of vegetable broth
- 1 ½ teaspoons of salt
- ½ teaspoon of black pepper
- 2 teaspoons of fresh thyme leaves, divided
- 4 pounds of Yukon Gold Potatoes, thinly sliced about 1/8 inch thick*
- ½ cup of nutritional yeast
