Meal Prep Tips

To keep weeknight dinners stress-free, I recommend doing grocery shopping on the same day you meal prep. That way ingredients don’t get buried in the fridge and you’re more likely to use everything you bought. Below are simple make-ahead and component-prep suggestions for each recipe so you can save time during busy evenings.

  • Tofu Meatballs
    • Make it ahead: Prepare the full batch on Sunday and store in the refrigerator for up to four days. Reheat in a skillet or air fryer to restore crispy edges. These freeze well for up to three months if you want to double the batch.
    • Component prep: Crumble and mix the tofu with the other meatball ingredients in advance. You can form the balls and refrigerate them unbaked for up to 24 hours, or pre-whisk the sweet-and-sour sauce and keep it in a jar ready to heat.
  • Chickpea Tacos
    • Make it ahead: The seasoned chickpea filling stores in the fridge for up to four days. When ready, warm the filling in a skillet, heat tortillas, and set out toppings for a fast assembly that’s done in minutes.
    • Component prep: Measure spices into a single small container for quick seasoning. Chop toppings—such as red onion, avocado, and cilantro—ahead of time and refrigerate until serving.
  • Honey Garlic Tofu
    • Make it ahead: Keeps well for up to four days. Reheat gently in a skillet over medium heat to improve texture; it won’t be quite as crispy but will remain flavorful.
    • Component prep: Press, cube, and store tofu in the fridge until cooking. Whisk the honey-garlic sauce (soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, sriracha, garlic powder, onion powder, cornstarch) and keep it refrigerated in a jar.
  • Roasted Red Pepper Pasta
    • Make it ahead: The roasted red pepper sauce stores well for up to four days—reheat gently and toss with freshly cooked pasta for best texture.
    • Component prep: Blend the sauce (roasted peppers, sautéed shallot and garlic, broth, cream, basil, salt) ahead of time and refrigerate. On the day you cook, simply boil pasta and warm the sauce for a meal ready in under 15 minutes.
  • Cheesy White Bean Tomato Bake
    • Make it ahead: This dish is best fresh so the crispy cheese edges remain at their peak. You can, however, assemble the bean base (garlic, tomato paste, beans, water) a day ahead and refrigerate, then top with cheese and bake when ready.
    • Component prep: Mince garlic and prep other simple components ahead of time. On baking day it’s about five minutes on the stovetop and ten minutes in the oven.
