My Culinary Journey with Artichokes and Ocean Mist Farms
As someone who is 50% Italian, I can tell you firsthand that Italians have an unparalleled understanding and appreciation for artichokes. My heritage has deeply influenced my cooking, and every visit to Italy is a culinary adventure, often revolving around discovering new and exquisite ways to prepare artichokes. From the famous Roman Artichokes (Carciofi alla Romana), which are melt-in-your-mouth tender, to countless regional specialties, the versatility of this vegetable is always astounding. I’m constantly gathering inspiration and adding new artichoke recipes to my list of must-try dishes.
This deep-seated love for artichokes fuels my passion for sharing recipes like this one. It’s more than just a dish; it’s an ode to a vegetable that brings so much character and flavor to the table. And among all the ways I’ve learned to prepare them, this Artichoke Bottoms recipe stands out as an absolute favorite. It embodies simplicity, elegance, and pure deliciousness, making it a staple in my kitchen.

Mastering Artichoke Preparation: A Simple Approach
The idea of prepping fresh artichokes can seem a bit intimidating if you’ve never done it before. However, I promise it’s much simpler than it looks, and with a few easy steps, you’ll become a pro in no time! For this particular recipe, our ultimate goal is to extract the tender, meaty “bottoms” – the very core of the artichoke, just above the stem and beneath the choke. While we only need the bottoms, I’ve found that cooking the artichokes whole initially is by far the easiest and most efficient method.
Here’s why cooking them whole is a game-changer: when a whole artichoke is cooked until perfectly tender, the outer leaves loosen dramatically, practically falling off to reveal the prize: the succulent heart and bottom. This eliminates the arduous task of meticulously trimming and peeling raw artichokes, saving you time and effort. If you’re a visual learner, I highly recommend watching my detailed video on Roman Artichoke preparation, which demonstrates the trimming process beautifully and applies directly to this recipe.
Don’t discard those cooked outer leaves! They are completely edible and incredibly delicious when dipped in a complementary sauce. You can easily whip up one of my suggested artichoke dipping sauces to enjoy them as a delightful snack or appetizer while you prepare the main dish. However, for the Stuffed Artichoke Bottoms recipe itself, only the tender heart and base are required.

The Heart of the Matter: Embracing Tender Artichoke Bottoms
Once you’ve cooked and peeled your fresh artichokes, what you’re left with are those coveted, meaty, and wonderfully tender artichoke bottoms. These are the true stars of this dish, offering a delicate flavor and a satisfying texture that forms the perfect foundation for our delicious cheesy filling. The careful preparation ensures that each bottom is soft enough to yield easily to a fork, yet firm enough to hold its shape and embrace the stuffing.
As mentioned before, this recipe is often prepared using canned artichoke bottoms. However, my aim was to elevate this classic with the unparalleled quality of fresh artichokes. The difference is truly remarkable, and I was absolutely thrilled with the outcome. Using fresh ingredients not only enhances the overall taste and texture but also offers a more vibrant and authentic artichoke experience. If you’ve ever wondered what to do with an abundance of fresh artichokes, this recipe is your answer, transforming them into an unforgettable meal or appetizer.

Crafting the Irresistible Cheesy Filling
The magic of these Stuffed Artichoke Bottoms lies not only in the fresh artichokes themselves but also in the incredibly simple yet profoundly flavorful cheesy stuffing. This delectable mixture can be whipped together in mere minutes, making the entire process surprisingly quick once the artichokes are prepped. Our filling combines finely grated Parmesan cheese, which lends a salty, umami depth, with creamy shredded mozzarella that promises a gooey, melted texture. These are bound together with a touch of rich mayonnaise, which adds moisture and a subtle tang.
Further enhancing the flavor profile are aromatic minced garlic, bright and zesty lemon zest, and a squeeze of fresh lemon juice that cuts through the richness of the cheese. Finally, a generous sprinkle of fresh, finely chopped parsley introduces a vibrant herbaceous note and a pop of color. Seasoned lightly with salt and pepper, this mixture is perfectly balanced, designed to complement the delicate flavor of the artichoke without overpowering it. Once nestled into the tender artichoke bottoms, this filling bakes to a golden perfection in the oven, emerging hot, bubbly, and utterly irresistible. The flavors meld beautifully, creating a symphony of taste that celebrates both the artichoke and its savory companion.
Customization and Vegan Variations
One of the beauties of this recipe is its adaptability. While the classic cheesy filling is divine, you can easily tweak it to suit your dietary preferences or explore new flavor combinations. For those looking to make this recipe entirely vegan, it’s a straightforward substitution. Simply swap out the traditional mayonnaise for a high-quality vegan mayonnaise and use your favorite brand of vegan Parmesan and mozzarella cheeses. Although I haven’t personally tried the vegan version yet, I am confident that with the array of excellent plant-based alternatives available today, it would yield a similarly delicious and satisfying result.
Beyond vegan options, feel free to experiment with other herbs like chives or dill, or even a pinch of red pepper flakes for a subtle kick. A little breadcrumb topping mixed with olive oil could also add a lovely crunchy texture. The fresh artichoke bottoms are a versatile canvas, ready to be adorned with your favorite flavors.

Serving Suggestions and Expert Tips
These Stuffed Artichoke Bottoms are wonderfully versatile. They make an exquisite appetizer for a dinner party, a sophisticated side dish alongside grilled meats or fish, or even a light and satisfying lunch. For an extra touch of elegance, garnish them with a sprinkle of fresh parsley or a lemon wedge just before serving. They are best enjoyed warm, straight from the oven, when the cheese is perfectly melted and the artichoke bottoms are at their most tender.
For best results, ensure your artichokes are firm, heavy for their size, and have tightly closed leaves, indicating freshness. If you’re short on time, you can prep and cook the artichokes a day in advance, storing the bottoms in the refrigerator. Then, simply assemble and bake when you’re ready to serve. This makes entertaining a breeze!
I genuinely hope you’ll give this Stuffed Artichoke Bottoms recipe a try. It’s a testament to the fact that fresh, wholesome ingredients, prepared with care, can truly elevate a dish from good to extraordinary. 6 artichoke bottoms
Print Recipe
Ingredients
- 6 fresh Ocean Mist artichokes
- ½ cup Parmesan, freshly grated
- ½ cup mozzarella, shredded
- ¼ cup mayonnaise
- 2 cloves garlic, finely minced
- Zest of ½ lemon
- Juice of ½ lemon
- 2 tablespoons fresh parsley, finely chopped
- Salt and pepper to taste, I usually just add a little pepper
Instructions
-
Bring a large pot (big enough to hold all 6 artichokes – or else you can work in batches) of water to a rolling boil. While the water heats, begin prepping your artichokes.
-
Carefully cut off most of the stem from each artichoke, leaving approximately 1 inch attached. Working around the base of each artichoke, pluck off the bottom outer leaves, typically 6-8 of them. Then, trim about the top 1/3 of the artichoke.
-
To remove the fuzzy choke, use a large spoon to gently scrape out the fibrous, inedible parts from the center of each artichoke. This will create a hollow space for the filling.
-
Place the prepped artichokes into the boiling water and cook for 15-20 minutes. They are done when a knife can easily pierce the stem, indicating tenderness. Remove them from the pot, drain any excess water thoroughly, and set them aside to cool to a manageable temperature.
-
While the artichokes cool, prepare the irresistible filling. In a medium mixing bowl, combine the freshly grated Parmesan, shredded mozzarella, creamy mayonnaise, finely minced garlic, bright lemon zest, fresh lemon juice, and chopped fresh parsley. Season with a touch of salt and pepper to taste (I typically just add a little pepper, as the cheese provides salt). Mix all ingredients until they are thoroughly combined. Preheat your oven to 375 degrees F (190 degrees C).
-
Once the artichokes are cool enough to handle comfortably, gently peel off all the remaining outer leaves to reveal the perfectly tender artichoke bottoms. If any tough or fibrous parts remain around the bottom or stem, carefully trim them away, leaving only the edible heart and base. Spoon the prepared cheesy mixture generously and evenly into the hollow of each artichoke bottom. Arrange the stuffed artichokes on a baking sheet.
-
Bake in the preheated oven for 20-25 minutes, or until the tops of the stuffed artichokes are lightly golden brown and the cheese filling is bubbly and perfectly melted around the edges. Serve these delightful Stuffed Artichoke Bottoms immediately and savor every delicious bite!
