Why you’ll love this viral lettuce wrap recipe!

The idea for this dish came from my friend Teri at No Crumbs Left. She posted a meat version of these caesar lettuce wraps that simply looked SO SAVORY and I knew I needed to make my own meat-free version of it!
Today we’re using my especially unfussy tofu “lunch meat” recipe in place of the chicken that Teri used. It’s unfussy to throw together and I like to make a big batch on the weekends so that we have something on hand throughout the week to make sandwiches or wraps like this.
So here’s why you’ll LOVE THESE:
- They’re light and healthy – the lettuce instead of bread makes these so light but the croutons and tofu make this a flavor-packed and filling meal!
- So unfussy to throw together – once the “lunch meat” is made, the wraps coming together in mere minutes! You can even make it ahead of time and pack it for work lunch.
- Packed with plant-based protein – I completely love the tofu in these wraps but you could also swap it for whatever protein you prefer.
- Easily customizable – Use whatever you want inside of your wraps!

Ingredients needed
The full list is down in the recipe card but let’s go over the main ingredients and substitutions!
- Tofu Lunch “meat” – I genuinely love this dish and have made it many times! It’s great for meal prep to be able to throw together truly simple lunches.
My chickpea salad would also be savory in this method (although I would leave out the curry powder) or even my air-fryer chickpeas! - Pickled red onions – I used Teri’s savory recipe to make these! To save time, you could also only use plain onions.
- Caesar dressing – every time I share this dish people always complain that caesar dressing has anchovies in it. However, there are lots of flavor-packed vegetarian and vegan versions on the market now. My recommendations are in the recipe card!
- Iceberg lettuce – I’ve tried this with other lettuces and they simple don’t work as well!
- Simple croutons + parmesan cheese!

Caesar Tofu Lettuce Wraps from the Pantry
These Caesar Tofu Lettuce Wraps are my meat-free take on a viral recipe and I completely love how these turned out! It's UNFUSSY to make and packed with a ton of flavor from the tofu lunch "meat" as well as the croutons, caesar dressing, and pickled red onion!
- Serves 1 wrap
- Prep 10 minutes
- Total 10 minutes
Ingredients
- 3 pieces of iceburg lettuce*
- Handful croutons of choice
- 2 tablespoons Parmesan cheese (Violife makes a flavor-packed vegan version!)
- ½ cup of tofu lunch “meat”/ protein of choice- chickpeas would be great too!
- 2 tbs Caesar dressing (I used Briannas vegetarian dressing but Follow Your Heart also has a satisfying vegan one!)
- ¼ cup Pickled red onions
Method
- 1
Particularly carefully remove the outer 3 layers of a head of iceberg lettuce. Using a pairing knife, cut the core (the harder white part) off of each piece. Lay the 3 leaves on top of each other to form a lettuce bowl of sorts. Be mindful of which way you're going to roll the wrap so you know to lay the ingredients lengthways with how you'll roll.
- 2
Sprinkle the lettuce with salt and pepper and then drizzle on the dressing.
- 3
Layer on the tofu, croutons, parmesan, and red onions. Drizzle with more dressing as desired.
- 4
Roll the wrap up like you would a burrito, starting at one end and making sure to tuck tightly. Once you get about halfway, fold in the sides and continue to roll up completely. I find this simplest to do on a piece of wax paper or parchment paper to keep it all tight.
- 5
Cut in half and enjoy!
Cook notes
For the lettuce – I’ve found that the go-to pieces are from the outer part of a head of iceberg lettuce. The closer you get to the center, the tough the pieces get and they’re much harder to properly roll up into a wrap. Most of the time, I can only get about 203 wraps from each head of lettuce before the pieces get too difficult to wrap. For the dressing – I used Briannas vegetarian dressing but Follow Your Heart also has a satisfying vegan one!
