My journey into food blogging started as a personal journal, a place to document my kitchen adventures and share my passion for cooking and photography. Over time, it evolved into a space dedicated to wholesome, delicious recipes, always accompanied by a glimpse into the stories behind them. I believe that food is more than just sustenance; it’s an experience, a memory, and often, a little piece of my heart on a plate. So, while some may prefer a straight-to-the-recipe approach, I’ll continue to share the full narrative, complete with generous visuals, because every dish has a story worth telling.

Why You’ll Fall in Love with Butternut Squash Stuffed Shells

These Stuffed Shells with Butternut Squash Sauce stand out as one of the absolute best creations I’ve made in quite some time. While I’ve always enjoyed making traditional stuffed shells, this version takes the familiar comfort food to an entirely new level. The inspiration struck when I considered pairing my recently shared Butternut Squash Pasta Sauce with the classic pasta shells, and the result was nothing short of extraordinary. The creamy, slightly sweet, and savory butternut squash sauce provides a vibrant and sophisticated backdrop for the rich cheese and sausage filling, making every bite an unforgettable experience.

This dish is incredibly hearty, making it perfect for a satisfying family dinner, a cozy gathering with friends, or even a special occasion. It offers a wonderful seasonal flavor, particularly suited for autumn and winter months when butternut squash is at its peak. Beyond its incredible taste, one of its greatest advantages is its fantastic freezer-friendliness, transforming it into an ideal option for meal prep or those busy weeknights when you need a delicious, ready-made meal.

Tips for Effortless Preparation

To ensure the smoothest cooking process and truly enjoy making these butternut squash stuffed shells, I highly recommend preparing the butternut squash sauce ahead of time. Ideally, make it the day before. This simple step significantly streamlines the overall cooking time and allows the flavors of the sauce to deepen, making your final dish even more incredible. Having the sauce ready means you can assemble and bake these shells with minimal fuss on cooking day.

The beauty of this recipe lies in its efficient workflow. While your jumbo pasta shells are boiling to al dente perfection, you can simultaneously brown the sweet Italian sausage. This parallel cooking saves valuable time in the kitchen. Once cooked, drain the sausage thoroughly to remove any excess grease, and set it aside to cool slightly. Similarly, drain your pasta shells and let them cool enough so they are comfortable to handle for stuffing.

Next, it’s time to create the luscious cheese mixture that will fill each shell. In a large bowl, combine the creamy ricotta, finely chopped mozzarella, a large egg (which acts as a binder), and a thoughtful blend of dried sage, oregano, and onion powder. These spices are carefully chosen to complement the sweetness of the butternut squash and the richness of the sausage. Once the sausage has cooled, gently fold it into the cheese mixture, ensuring an even distribution of flavor throughout the filling.

Once the sausage is mixed in, you’ll have a wonderfully aromatic and flavorful filling ready to transform those pasta shells.

Preparing the baking vessel is the next crucial step. Pour about two-thirds of your delectable butternut squash sauce into the bottom of a large baking tray, spreading it out evenly. If you prefer, or if you’re making a larger batch, using two medium-sized trays works beautifully. This prevents the shells from being overcrowded and allows them to bake more evenly, contributing to a more appealing presentation.

Now for the fun part: arranging and filling the shells! Carefully place the cooked jumbo shells on top of the sauce, leaving a little space between each. Then, generously fill each shell with the cheesy sausage mixture. A good rule of thumb is about two tablespoons of filling per shell. If you find yourself with any leftover filling, simply distribute it among the already stuffed shells. They can always use a little extra goodness!

Finally, cover the stuffed shells with the remaining butternut squash pasta sauce, ensuring every shell is generously coated. Finish with a sprinkle of shredded Parmesan cheese for that perfect golden, bubbly topping. Bake for approximately 35-40 minutes at 375 degrees F (190 degrees C), or until the cheese is beautifully melted and lightly golden, and the sauce is bubbling. The aroma filling your kitchen will be absolutely irresistible!

Meal Prep Made Easy: Freezer-Friendly Stuffed Shells

One of the most fantastic aspects of this dish is its remarkable ability to freeze exceptionally well. This makes it an absolute game-changer for meal prepping! Imagine having a delicious, homemade meal ready to go on a moment’s notice. To freeze, simply portion a few cooked and sauced shells into individual, airtight freezer-safe containers. You can even add a little extra sauce to each container to keep them moist upon reheating. These containers can then be stored in the freezer for up to 2-3 months.

When you’re ready to enjoy a quick and easy microwave meal, simply grab a container from the freezer. You can reheat directly from frozen in the microwave until heated through, or thaw them in the refrigerator overnight and then reheat in the oven or microwave. This freezer-friendly feature ensures you always have a hearty, comforting, and delicious meal waiting for you, saving time and stress on those busy days. It’s truly the ultimate convenience food!

Stuffed Shells with Butternut Squash Sauce

By: Brita Britnell

Prep Time: 20 minutes

Cook Time: 35 minutes

Total Time: 55 minutes

Servings: 8

Ingredients

  • ½ box of jumbo pasta shells (6 ounces)
  • 1 pound sweet Italian sausage
  • 15 ounces of ricotta cheese
  • 8 ounces of mozzarella cheese, finely chopped
  • 1 large egg
  • ½ teaspoon of dried sage
  • ½ teaspoon of oregano
  • ½ teaspoon of onion powder
  • 2 cups of butternut squash pasta sauce (link to recipe above)
  • ½ cup of shredded Parmesan cheese for topping

Instructions

  1. Pre-heat oven to 375 degrees F (190 degrees C).
  2. Start by cooking the sweet Italian sausage according to package directions until it’s fully cooked through and browned. Set aside on a few paper towels to absorb any excess grease and allow it to cool slightly.
  3. While the sausage is cooking, bring a large pot of salted water to a boil and cook the jumbo pasta shells until they are al dente, according to package instructions. Drain thoroughly and set aside to cool enough for you to handle them without burning your hands.
  4. In a large mixing bowl, combine the ricotta cheese, finely chopped mozzarella cheese, large egg, dried sage, oregano, and onion powder. Mix well until all ingredients are thoroughly combined.
  5. Once the cooked sausage has cooled down to a moderate temperature, stir it into the cheese mixture until evenly incorporated.
  6. In a large baking tray (or divide between two medium-sized trays for better spacing), pour approximately two-thirds of the butternut squash sauce into the bottom and spread it out evenly to create a base for the shells.
  7. Evenly space out all of the cooked pasta shells in the baking tray(s). Carefully fill each shell with the cheesy sausage mixture, using approximately 2 tablespoons per shell. If you have any leftover filling, you can add a little extra to some of the already filled shells.
  8. Cover the stuffed shells evenly with the remaining butternut squash pasta sauce. Sprinkle the shredded Parmesan cheese generously over the top of the shells.
  9. Bake for 35-40 minutes, or until the cheese on top is thoroughly melted, bubbly, and lightly golden brown.
  10. Optional: Once out of the oven, for an extra touch of flavor, you can sprinkle with a bit more fresh Parmesan cheese or chopped fresh parsley, then serve immediately and ENJOY!
