Grilled Artichokes:

  • 2 Ocean Mist Farms Artichokes
  • 1 ½ tablespoons of olive oil
  • salt and pepper to taste
  • ½ teaspoon of garlic powder
  • 1 lemon, cut into wedges
  • ½ cup of water (for Instant Pot/Steaming)

GARLIC AIOLI SAUCE:

  • ½ cup of mayonnaise
  • 2 cloves of garlic, finely minced
  • 2 tablespoons of lemon juice
  • ½ teaspoon of salt
  • ¼ teaspoon of freshly cracked black pepper

Instructions

Artichoke Preparation:

  1. Prepare the artichokes by plucking off the bottom outer leaves down by the stem, typically 6-8 tough leaves.
  2. Lay the artichoke on its side, cut off the bottom of the stem, and then trim off the top 1/3 of the artichoke.
  3. Trim the sharp, prickly tips off all remaining leaves, about ¼-½ inch off each.
  4. Cut the artichoke in half lengthwise, working from the stem up through the top.
  5. Using a large spoon, scrape out the fuzzy choke and any purple inner leaves from the middle. Rub all cut edges generously with a lemon wedge to prevent browning.

Pre-Cooking Artichokes (Instant Pot Method):

  1. In the base of your Instant Pot, place ½ cup of water and the lemon wedges. Place a steamer rack on top, then arrange the artichokes on top (they can overlap slightly). Secure the lid, set to “sealing,” and cook on high pressure for 5 minutes. When done, quick release the steam.
