My journey into the wonderful world of Indian cuisine began relatively recently. Growing up, Indian food wasn’t a common feature at our dinner table. However, in recent years, I’ve enthusiastically made up for lost time! Even in a smaller southern city like Nashville, the Indian food scene thrives, boasting an impressive array of authentic restaurants. Among them, I’ve discovered my absolute favorites, and without fail, my go-to order is always Tikka Masala. There comes a point, usually after about five visits to the same restaurant for the same dish, where I realize it’s time to try recreating that magic at home. And that, my friends, is how this magnificent, plant-based Tikka Masala came into existence! (Apologies for the outburst – my passion for this dish is simply undeniable).

Crafting the Perfect Plant-Based Tikka Masala

Of the hundreds of recipes on my blog, this Loaded Veggie Tikka Masala is arguably the one I’ve tested and refined the most extensively. I simply substituted dairy yogurt with unsweetened coconut yogurt and heavy cream with rich, full-fat coconut cream. These plant-based alternatives not only maintained the creamy texture but also added a subtle, complementary depth of flavor that works beautifully with the Indian spices. Everything else in the original concept was already naturally vegan, making the transition seamless.

The Simplified Path to Incredible Flavor

Many traditional Tikka Masala recipes often begin with creating a curry paste, which is then rubbed over meat and left to marinate for hours. In our plant-based version, we happily skip this time-consuming step! No marinating required, allowing us to get this delicious meal on the table much faster without compromising on flavor.

Instead, we build our flavor foundation with a unique and powerful blitzed sauce. This simple yet incredibly effective mixture combines fresh onion, garlic, ginger, and cilantro. When blended, these ingredients create an aromatic paste that contributes a mind-blowing depth of flavor to the dish, acting as a fresh, vibrant base for our curry. Following this, we move on to the aromatic heart of any good curry: sautéing onions with a generous blend of spices. Finally, the hearty cauliflower florets and finely chopped carrots are added, ready to simmer and absorb all the wonderful aromas.

Allow the mixture to gently simmer, giving the cauliflower and carrots ample time to soften and become tender, perfectly cooked through but still retaining a slight bite. This simmering period is essential for all the flavors to meld and deepen. Just as the vegetables are reaching their desired tenderness, the chickpeas and frozen peas are folded in. These additions only require a few minutes to heat through and absorb some of the incredible sauce. Regarding the chickpeas, don’t feel restricted to using exactly half a can. If you prefer a more substantial dish, feel free to add the entire can! I’ve tried it both ways, and it works wonderfully. You can always slightly reduce the amount of cauliflower or carrots if you opt for extra chickpeas, ensuring the dish remains balanced and deliciously saucy.

Customization and Serving Suggestions

The beauty of this Veggie Tikka Masala lies in its versatility. While my chosen combination of peas, cauliflower, carrots, and chickpeas creates a perfectly balanced and delightful meal, don’t hesitate to get creative with other vegetables! Spinach, bell peppers, zucchini, sweet potatoes, or even green beans would all be fantastic additions, adapting beautifully to the rich, creamy sauce. Easy and delicious loaded veggie tikka masala

Ingredients

  • Large yellow onion, 1/2 goes in blitzed sauce, 1/2 is finely chopped
  • 2 cloves garlic
  • 1 inch ginger, peeled
  • 10 sprigs of fresh cilantro, plus more for serving
  • 2 tablespoons olive oil, divided
  • ½ teaspoon cumin
  • ½ teaspoon turmeric
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon of salt, optional
  • 1 ½ teaspoons garam masala
  • 400 g canned plum tomatoes, not drained
  • 1 15 ounce can of tomato sauce
  • 1 small container of vegan yogurt**, roughly 5 ounces (I typically use So Delicious or Kite Hill unsweetened yogurt)
  • 1 15 oz can of full fat coconut cream or milk**
  • ½ head of cauliflower, chopped into bite sized pieces
  • 3 large carrots, peeled and finely chopped
  • 1 15 oz can of chickpeas, drained and rinsed
  • 1 cup frozen peas
  • Optional for serving: chopped cilantro, extra yogurt, basmati rice cooked

Instructions

  • In a food processor, combine half of the onion, garlic, ginger, cilantro stalks, and 1 tablespoon of olive oil. Blitz until fully combined about 1 minute. (see photo above) Set aside.

  • In a large skillet, heat the remaining olive oil over medium heat. Add in the chopped onion and spices, stir to combine and cook gently for 10 minutes.

  • Into the skillet, add the plum tomatoes (with the liquid from the can), tomato sauce, yogurt, coconut milk and the blitzed onion and cilantro sauce. Cook for an additional 5 minutes over medium heat.
    400 g canned plum tomatoes, 1 15 ounce can of tomato sauce, 1 small container of vegan yogurt**, 1 15 oz can of full fat coconut cream or milk**
  • Add in the cauliflower and carrots and bring to a simmer. Simmer for 20 minutes.
    1/2 head of cauliflower, 3 large carrots
  • Once the veggies are tender, add in chickpeas and frozen peas. Stir to combine and let cook for 5 more minutes or until peas are fully heated through.
    1 15 oz can of chickpeas, 1 cup frozen peas
  • Serve with rice and (optional) a bit more cilantro leaves and yogurt. Enjoy!
    Optional for serving: chopped cilantro
