Ingredients
For the salad:
- 2 heads of romaine lettuce, cut in half longways
- 2 ears of corn, shucked
- 1 zucchini, cut in half lengthways (or quartered if larger)
- 1 red bell pepper, cut into 1 inch strips
- Olive oil for brushing
- 1 cup of cherry tomatoes, halved
- Optional for topping: Sunflower seeds, pine nuts or other seed/nut
- 1 bag of Ocean Mist Season and Steam Sweet Baby Broccoli
For the dressing:
- ⅓ cup of mayo, vegan as desired
- 2 cloves of garlic, grated or finely minced
- ¼ teaspoon of onion powder
- ¼ teaspoon of dill, fresh or dried
- Zest and juice of 1/2 a lemon
- ¼ teaspoon of salt
- Freshly ground black pepper, to taste
Instructions
- Pre-heat your grill to high heat (about 400 degrees Fahrenheit or 200 degrees Celsius).
- Lay out the romaine lettuce halves, corn, zucchini, and bell pepper on a large tray or plate. Lightly brush all the vegetables with olive oil. A cooking spray can also be used for convenience.
- Place the corn on the preheated grill and cook for 8 minutes, rotating it a quarter turn halfway through to ensure even charring. After 8 minutes, add the zucchini and bell pepper to the grill alongside the corn, and continue grilling for an additional 5 minutes. At this point, rotate the corn another quarter turn, and flip the bell pepper and zucchini. Finally, add the romaine lettuce, cut side down, to the grill and cook everything for 4 more minutes. During the last minute of grilling, flip the romaine to char lightly on the other side.
- Carefully remove all grilled vegetables and lettuce from the grill and allow them to cool slightly. Once they are cool enough to handle comfortably, cut the corn kernels from the cob and dice the bell pepper and zucchini into bite-sized pieces.
- Prepare the Season and Steam broccoli according to the package directions (typically 3 minutes in the microwave). Let it cool slightly, then chop it into smaller pieces if desired.
- For the dressing, combine all the listed ingredients in a small bowl and whisk them together until smooth and well combined. Adjust seasoning to taste.
- To serve, arrange a grilled romaine half (or chopped romaine) as the base. Top generously with the grilled corn, zucchini, bell pepper, cherry tomatoes, and chopped steamed broccoli.
