One Skillet Butternut Squash & Sausage Pasta

Ingredients
- 1 pound of sausage, either ground or links cut into small pieces
- 3 cloves of garlic, minced
- Pinch of salt
- ~1/4 teaspoon of black pepper
- 4 cups of chicken broth**
- ½ cup of white wine or other cooking wine**
- ½ cup of cream (I used half and half because it’s what I had in the house)**
- 12 ounces of pasta (I used penne)
- ½ of a butternut squash, ~3 1/2 cups diced into cubes
- 2 large handfuls of spinach, roughly chopped
- 1-2 teaspoons of fresh thyme, de-stemmed (depending on preference)
- 6 ounces of cheese, cubed (I used mozzarella)
- **If you would prefer, you can omit the cream and/ or white wine and substitute it with an equal amount of more broth.
Instructions
- In a large skillet over medium heat, combine the minced garlic, salt, pepper, and sausage. Cook, stirring frequently, until the sausage is fully cooked and browned. Once done, transfer everything from the pan into a separate bowl and set aside. Return the empty skillet to the stove.
- Pour the chicken broth, white wine, and cream into the skillet. Add the pasta to the liquid. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 6 minutes, stirring occasionally.
- Add the diced butternut squash to the simmering pasta and continue to cook for an additional 8-10 minutes, or until both the pasta and the squash are just barely tender. The pasta should be al dente, and the squash soft but not mushy.
- Stir in the fresh thyme and roughly chopped spinach. Cook for another couple of minutes until the spinach has wilted.
