East Nashville, for those unfamiliar with its charming topography, is renowned for its undulating landscape. Picture rolling hills that offer stunning views but also present a formidable challenge for any runner. For years, these very hills had served as my convenient excuse to avoid serious running. However, with Mary by my side, I felt a renewed sense of motivation.

Mary, bless her patient soul, matched my ridiculously slow pace and carried the bulk of the conversation as we navigated the inclines. We embarked on a respectable 2.35-mile journey, a significant accomplishment for me, even if it did involve a few strategic walking breaks. We kept promising each other a photo to commemorate our achievement, but alas, the excitement of the run (and perhaps the exertion!) meant it never happened. All the more reason to plan another adventure soon!

After our invigorating run, it was time for the true reward: an extended chat over the most incredible Blueberry Mojitos and Mary’s homemade sun-dried tomato hummus (which was utterly divine!). Ingredients

  • 10 leaves of fresh mint, save 2 small leaves for garnish!
  • 2 limes, quartered (save 2 small slices for garnish!)
  • ½ cup of fresh blueberries
  • 2 tablespoons agave nectar (or simple syrup, adjust to taste)
  • 3-4 shots of white rum (adjust to preference)
  • ½ cup club soda (or sparkling water)
  • Ice
  • 2 tall glasses

Instructions

  • In each tall glass, gently muddle the fresh mint leaves, blueberries, and quartered lime wedges. The goal is to release the aromatic oils from the mint and the juices from the blueberries and lime, but avoid over-muddling which can make the mint bitter.
  • Add 1.5 to 2 shots of white rum to each glass (depending on your desired strength). Stir in 1 tablespoon of agave nectar until fully combined. Taste and adjust sweetness if necessary.
  • Fill each glass generously with ice cubes. The more ice, the colder and more refreshing your mojito will be.
  • Top each drink with about ¼ cup of club soda or sparkling water. Stir gently to incorporate all the flavors without losing too much fizz.
