Spaghetti Squash Burrito Bowl- these burrito bowls VEGAN, easy to throw together, and SO very filling.

Ingredients

  • 1 large spaghetti squash, cut in half lengthwise and de-seeded
  • Cooking spray
  • 1 can of black beans, rinsed and drained
  • ½ red onion, finely diced
  • 1 bell pepper (I used half red and half yellow), finely chopped
  • 1 jalapeno, diced (remove seeds for less heat, if preferred)
  • 1 ½ tablespoons avocado oil
  • 1 clove of garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • ½ teaspoon of cumin
  • ¼ teaspoon cayenne pepper, optional (for an extra spicy kick)
  • ½ + ⅛ teaspoon fine sea salt, or to taste
  • 1 cup of corn, frozen (can be fresh or canned, drained)
  • ½ cup of non-dairy “cheddar cheese”, shredded
  • For topping: chopped avocado and fresh cilantro

Instructions

  1. Pre-heat your oven to 350 degrees F (175 degrees C). Lightly spray a baking sheet with cooking spray. Place the spaghetti squash halves on the sheet, skin side down. Bake in the oven for 40-45 minutes, or until the flesh is tender and can be easily pierced with a fork.
  2. Once baked, remove the squash from the oven and set it aside to cool slightly. Keep the oven on.
  3. While the squash is cooling, prepare the vibrant filling. In a large skillet, heat the avocado oil over medium heat. Add the finely diced red onion and sauté for about 5 minutes, stirring frequently, until softened and translucent.
  4. Add the minced garlic, rinsed black beans, chopped bell pepper, diced jalapeno, chili powder, dried oregano, cumin, cayenne pepper (if using), and sea salt to the skillet. Cook for an additional 5 minutes, allowing the flavors to meld beautifully. Finally, stir in the frozen corn and cook until it is warmed through. Remove the skillet from the heat.
  5. Once the spaghetti squash is cool enough to handle, use a fork to shred the flesh away from the skin. Place the shredded squash on a cutting board. Reserve the empty squash skins for later use. Lightly chop the spaghetti squash strands to shorten them, making them more rice-like in texture. Gently fold the chopped spaghetti squash into the black bean and vegetable mixture in the skillet.
  6. Carefully re-stuff the reserved squash skins with the hearty squash and black bean mixture. Generously top each stuffed squash half with the shredded non-dairy “cheddar cheese.”
  7. Place the re-stuffed squash halves back into the pre-heated oven for approximately 5 minutes, or until the non-dairy cheese has fully melted and is bubbly.
