These Hostess Copycat Cupcakes are so fun to make and absolutely delicious!

Ingredients

For the cupcakes:

  • 2 ½ cups of all purpose flour
  • 1 ¾ cups of organic cane sugar or granulated sugar
  • ¾ cup of cocoa powder
  • 1 teaspoon of baking powder
  • 1 teaspoons of baking soda
  • 1 teaspoon of salt
  • 1 teaspoon of espresso powder
  • cup of melted coconut oil, get unrefined if you want it to be virtually tasteless, vegetable or canola oil also work
  • 1 ½ tablespoons of apple cider vinegar
  • 1 teaspoon of vanilla
  • ½ teaspoon of almond extract
  • 1 ½ cups of milk, any kind works here,, at room temperature
  • ½ cup of apple sauce unsweetened, at room temperature*

For the filling:

  • ¼ cup of vegan butter, at room temperature
  • ¼ cup of vegetable shortening, at room temperature
  • 1 ¾ cup of powdered sugar
  • 1 teaspoon of vanilla
  • 1 tablespoon of plant based milk

For the ganache:

  • 4 oz of semisweet or dark chocolate, vegan
  • 2 ½ tablespoons of thick coconut cream, the solid part and not the liquid

The icing piping:

  • 2 tablespoons of butter, at room temperature
  • ½ cup of powdered sugar
  • 1 tablespoon milk of choice

Instructions

For the cupcakes:

  • Pre-heat your oven to 350 degrees F (175°C). Line 2 cupcake tins (this recipe makes roughly 18-20 cupcakes) and lightly spray the inside of the liners with cooking spray.
  • In a small bowl or measuring cup, gently stir together the apple cider vinegar and plant-based milk. Allow this mixture to sit for 5 minutes; it will curdle slightly, creating a vegan “buttermilk” essential for tenderness. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment (or a large bowl with an electric mixer or even just a sturdy whisk), combine the all-purpose flour, granulated sugar (organic cane sugar works wonderfully), cocoa powder, baking powder, baking soda, salt, and espresso powder. Whisk these dry ingredients thoroughly until well combined and lump-free.
  • To the dry ingredients, add the melted coconut oil (or alternative oil), the “buttermilk” mixture (milk/apple cider vinegar), vanilla extract, almond extract, and unsweetened applesauce. Mix on low speed until just combined. Be careful not to overmix, as this can lead to tough cupcakes. Scrape down the sides of the bowl as needed to ensure everything is fully incorporated.
  • Evenly distribute the cupcake batter among your prepared cupcake tins, filling each liner approximately 3/4 of the way full. Depending on how high you fill them, you’ll yield between 18 and 20 cupcakes.
  • Bake for 20-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Once baked, remove the tins from the oven and let the cupcakes cool in the tins for a few minutes before transferring them to a wire rack to cool completely. Ensure they are fully cooled before proceeding to the filling and frosting steps.

For the filling:

  • In a medium bowl, using an electric mixer or stand mixer, beat together the room temperature vegan butter and vegetable shortening until the mixture is light and fluffy, usually about 2 minutes. This creates the essential creamy base for the filling.
  • Gradually add the powdered sugar to the butter and shortening mixture, beating continuously. Continue to beat for an additional 3 minutes after all the sugar is incorporated, ensuring the filling is smooth and airy.
  • Finally, stir in the vanilla extract and the plant-based milk. Beat for 3 more minutes until the filling is perfectly fluffy and pipeable. Place the filling in the fridge to chill for at least 30 minutes, or until ready to use. Once chilled, transfer the filling into a large piping bag fitted with a thick, round tip (or a Bismark tip if you have one).

For the ganache:

  • Melt the vegan semisweet or dark chocolate using a microwave (in 30-second intervals, stirring between each) or a double boiler until smooth. Once melted, whisk in the thick coconut cream (make sure to use the solid, fatty part from the top of a chilled can of full-fat coconut milk, not the liquid) until fully combined and the ganache is glossy and smooth. Let it cool slightly at room temperature, stirring occasionally, until it reaches a dip-able consistency (not too hot, not too thick).

For the icing piping:

  • In a medium bowl, beat the room temperature vegan butter until smooth and creamy, about 1 minute. Gradually add the powdered sugar and the milk of choice, beating until the icing is combined, smooth, and has a pipeable consistency. This should be a thick but flowing icing. Transfer this icing into a small piping bag fitted with a thin, round tip for the signature swirl.

To assemble:

  • Once the cupcakes are completely cooled, take one at a time. Insert the tip of the filling bag into the center of the cupcake, pressing down lightly until the tip is roughly in the middle. Slowly but steadily squeeze the filling into the cupcake until it begins to puff up slightly and emerge from the top. Continue squeezing as you gently pull the piping bag out of the cupcake. For best results, I recommend sacrificing the first cupcake by cutting it open to gauge how much filling is ideal, allowing you to perfect the technique for the remaining ones. Repeat this process for all cupcakes.
  • Carefully dip the top of each filled cupcake into the prepared ganache, gently rolling the top around to ensure it is fully coated. Allow any excess ganache to drip off. Repeat with all the cupcakes. Place the ganache-dipped cupcakes into the fridge for at least 30 minutes to chill and allow the ganache to harden and set.
  • Once the ganache is firm, retrieve the small piping bag with the white icing. Pipe the icing onto the top of each cupcake in the classic swirled pattern, starting from one edge and working your way inward.
  • Your homemade Copycat Vegan Hostess Cupcakes are now complete! ENJOY!

Expert Tips for Perfect Vegan Hostess Cupcakes

  • Room Temperature Ingredients are Key: For the cupcakes and particularly for the filling and icing, ensure your vegan butter and plant-based milk are at room temperature. This helps everything cream together smoothly, preventing lumps and ensuring a cohesive texture.
  • Do Not Overmix the Cupcake Batter: Overmixing can develop the gluten in the flour, leading to dense, tough cupcakes. Mix until just combined and no dry streaks remain. A few small lumps are perfectly fine.
  • The Secret to a Smooth Ganache: For the ganache, use good quality vegan chocolate and ensure your coconut cream is the thick, solid part from the top of a chilled can. If the ganache seems too thick, add a tiny bit more liquid coconut milk or a plant-based cream; if too thin, let it cool longer in the fridge.
  • Piping Technique for the Filling: Practice makes perfect! Don’t be afraid to experiment with your first cupcake to get a feel for how much filling to pipe. The goal is a generous filling without bursting the cupcake.
  • Chilling is Crucial: Allow the ganache to set completely in the fridge before piping the white swirl. This prevents the white icing from melting or bleeding into the chocolate, ensuring a clean, crisp finish.
  • Espresso Powder Boosts Chocolate Flavor: While optional, a touch of espresso powder enhances the richness and depth of the chocolate flavor without making the cupcakes taste like coffee. Don’t skip it if you want that intense chocolate experience!

Variations & Substitutions to Personalize Your Cupcakes

  • Gluten-Free Option: You can often substitute the all-purpose flour with a 1:1 gluten-free baking blend that contains xanthan gum. Ensure all other ingredients are naturally gluten-free. Baking times might vary slightly.
  • Different Flavor Extracts: While vanilla and almond are classic, feel free to experiment with other extracts in the filling or even the cupcake batter. Peppermint extract for a holiday twist, or a hint of orange zest could be delightful.
  • Oil Alternatives: If you don’t prefer coconut oil, or want a different flavor profile, vegetable oil, canola oil, or even a neutral-flavored olive oil can be used for the cupcakes. Just ensure it’s a liquid oil at room temperature.
  • Milk Alternatives: Any plant-based milk works well in this recipe. Almond milk, soy milk, oat milk, or cashew milk are all excellent choices. Ensure it’s unsweetened if possible, or adjust sugar levels accordingly.
  • Cream Cheese Filling: For a tangier filling, consider substituting half of the vegan butter/shortening with vegan cream cheese in the filling. Adjust powdered sugar to taste.
  • Darker Chocolate Ganache: If you love intense dark chocolate, opt for a higher percentage cacao vegan dark chocolate for the ganache. This will create a richer, slightly less sweet topping.

Commonly Asked Questions (FAQ)

How long do these vegan Hostess cupcakes last?
I suggest storing any leftover cupcakes in an airtight container in the refrigerator for up to 4 days. They are best enjoyed at room temperature, so let them sit out for 15-20 minutes before serving.
Can I make these ahead of time?
Absolutely! You can bake the cupcakes a day in advance and store them at room temperature in an airtight container. Prepare the filling, ganache, and icing a day ahead and store them in the fridge. Assemble the cupcakes a few hours before serving for the freshest taste and appearance.
Is espresso powder necessary in the cupcakes?
While not strictly necessary, espresso powder significantly enhances the chocolate flavor, making it deeper and more complex without adding a coffee taste. If you don’t have it, you can omit it, but for the best chocolate experience, I highly recommend it.
Why is my ganache not setting or too thick?
If your ganache is too thin, it might be too warm or you might have used too much liquid coconut milk instead of the thick cream. Try chilling it longer in the fridge, stirring occasionally. If it’s too thick, gently warm it slightly in the microwave for a few seconds or add a tiny bit more liquid plant-based milk, whisking until smooth.
Can I use regular butter and milk if I’m not vegan?
While this recipe is specifically formulated for vegan ingredients, you could potentially use dairy butter and milk if you are not vegan. However, the precise ratios and interactions with other ingredients might differ slightly, and the result may not be exactly the same as the vegan version described.

Notes
