- 6 servings
- Prep 15 minutes
- Cook 10 minutes
- Total 25 minutes
Ingredients
- 1 pound of spiral pasta (I like the tri-color but regular is fine too!)
- ½ of a red onion (thinly sliced)
- ½ cup of diced tomatoes
- 1 small green bell pepper (chopped (about 1 cup))
- optional: 1 can of sliced black olives (mine was 6 ounces)
- ¼ cup of chopped fresh parsley
- ⅓ cup of olive oil
- 2 tablespoons of white balsamic vinegar
- ½ tsp of Italian seasoning
- 1 tsp of garlic powder
- 1 tsp of onion powder
- ¼ tsp of crushed red pepper
- Salt and pepper to taste
- Pinch of sugar
Method
- 1
Cook your pasta according to package directions. Drain and set aside. If serving the pasta salad cold, run the cooked pasta under cold water to cool it off quite a bit.
- 2
Make the dressing by combining the olive oil, vinegar, Italian seasoning + other spices, and sugar. Whisk until fully combined.
- 3
In a large bowl, combine the cooked pasta, veggies, parsley and dressing. Toss until the pasta and veggies are fully coated in the dressing.
- 4
Salt and pepper to taste and ENJOY!!!
