Wholesome & Hearty: Delicious Wild Greens & Quinoa Stuffed Peppers with Eat Smart Kits
As the seasons shift, so too do our cravings. Just this morning, a crisp, biting chill filled the air, a stark contrast to the delightful 70-degree warmth Nashville had been enjoying. It often feels like the sunniest days are reserved for when I’m confined to my windowless office, only for the temperatures to plummet the moment I’m ready to embrace the outdoors. My partner, Stephen, and I found ourselves bundled in multiple layers and gloves just to tackle some yard work and chicken coop repairs last Sunday. Needless to say, the desire for spring’s gentle warmth is palpable!
Balancing Comfort and Health: A Personal Journey
The colder weather inevitably steers my culinary desires towards rich, comforting dishes. I find myself yearning for meals that are warm, deeply savory, and ideally enveloped in a luscious, flavorful sauce. However, this preference presents a challenge that many can relate to. In a moment of genuine honesty, I’ve noticed significant changes in my body since retiring from roller derby and simply navigating the natural process of getting older, where metabolism seems to slow down quite noticeably. I’m currently about 20 pounds heavier than my usual weight, a change that has been challenging to accept.
I hadn’t fully appreciated just how many calories I burned during four days a week of intense roller derby training. The shift has made me realize the critical role diet plays in overall well-being. While I acknowledge that increasing my physical activity would certainly help, a substantial portion of this change stems directly from my eating habits. This spring, my friend Lisa and I are dedicated to recommitting to a healthier lifestyle. Our goal is to regain a sense of comfort and vitality in our bodies, and perhaps, more importantly, to ensure all our pants fit comfortably once more!

Crafting Your Delicious Stuffed Peppers: A Step-by-Step Guide
The beauty of this recipe lies in its simplicity and the comprehensive nature of the Eat Smart kit. Everything you need for this wonderfully satisfying dinner is conveniently packed within the kit, requiring only a few additional pantry staples: a touch of oil, a bit of water, and, of course, the vibrant bell peppers themselves.
The preparation begins with the bell peppers. Roasting them in the oven not only softens their texture but also brings out their natural sweetness, adding a depth of flavor that complements the hearty filling. As the peppers begin their transformation in the heat, your attention can turn to the core of the stuffing: the quinoa and greens. In a large skillet, a small amount of oil and water are gently heated, creating the perfect environment to lightly cook the quinoa provided in the salad kit. This step ensures the quinoa is perfectly tender and infused with initial flavors. Once the quinoa has absorbed most of the liquid, the remaining components of the vegetable salad kit — the generous medley of super greens and crunchy vegetables — are introduced to the skillet. These are cooked for just a few brief minutes, allowing all the ingredients to warm through and their flavors to meld beautifully without overcooking the delicate greens.
The skillet mixture only requires about five minutes on the heat before it’s ready for the final touches. At this point, half of the accompanying cheese, half of the crunchy almonds, and half of the creamy avocado herb dressing are folded into the warm quinoa and greens. This thoughtful addition distributes the rich flavors and textures throughout the filling, creating a truly irresistible warm salad that is both substantial and incredibly delicious. The aroma filling your kitchen will be a testament to the wholesome goodness being prepared.
With the savory filling perfectly prepared and the bell peppers beautifully roasted, the final step is a simple assembly. Carefully scoop the vibrant quinoa and greens mixture into each tender, hollowed-out bell pepper half. To complete this culinary masterpiece, generously sprinkle the remaining cheese and almonds over the stuffed peppers, and finish with a delightful drizzle of the reserved avocado dressing. The presentation is as appealing as the taste!
