This ensures every bite is infused with incredible flavor and a delightful texture contrast.

  • Removing the Choke: This is a crucial step for whole stuffed artichokes. The “choke” is the fuzzy, inedible fibrous center located above the heart. To remove it, gently pry open the center leaves to expose the fuzzy choke. Use a large spoon to carefully scoop out and scrape away all of the fuzzy bits, being careful not to damage the tender artichoke heart beneath. While not strictly necessary before cooking, I highly recommend doing this prior to stuffing to ensure a clean eating experience.

Ingredients

  • 2 Ocean Mist Purple artichokes
  • 2 cups of bread crumbs (plain or panko work well)
  • Zest of 1 medium lemon
  • 1 lemon, quartered (use the same lemon you zested)
  • ⅓ cup of grated Parmesan cheese (or a vegan alternative)
  • 3 cloves of garlic, minced finely
  • ⅓ cup of fresh parsley, finely chopped
  • ⅓ cup of olive oil, plus extra for drizzling
  • ¼ teaspoon of black pepper, freshly ground
  • ½ cup of dry white wine (optional, but highly recommended for flavor)
  • Salt, to taste

Instructions

  1. Pre-heat your oven to 375 degrees F (190 degrees C). Select a large Dutch oven or an oven-safe casserole dish with a tight-fitting lid that can comfortably accommodate the artichokes.
  2. Prepare the stuffing: In a medium bowl, combine the bread crumbs, lemon zest, grated Parmesan cheese, minced garlic, finely chopped parsley, ⅓ cup of olive oil, and black pepper. Mix thoroughly until all ingredients are well incorporated and the mixture is moist. Set aside.
  3. Prepare the artichokes: Begin by cutting off the bottom of each artichoke stem, creating a flat surface so the artichoke can sit steadily upright. This is important for stuffing and even cooking.
  4. Working your way around each artichoke, carefully pluck off the tough, smaller bottom outer leaves near the stem. These are usually too fibrous to eat. Then, trim off the top 1/3 of the entire artichoke with a sharp knife (refer to a visual guide if you’re unsure).
  5. Next, use kitchen shears or a paring knife to trim the sharp, prickly tips off all the remaining leaves. This step prevents any discomfort when handling or eating the artichoke and makes it much more pleasant. You want to snip off about 1/4 to 1/2 inch from each leaf tip.
  6. Remove the choke: Gently pry open the center leaves of each artichoke to expose the fuzzy choke. Using a large spoon, carefully scoop out all of the fuzzy bits and any inner purple leaves that are thin and not meaty. This will create a clean cavity for your stuffing. Immediately rub all cut edges of the artichoke with a lemon wedge to prevent browning.
  7. Stuff the artichokes: Use your fingers to gently spread apart the artichoke leaves, creating small pockets. Generously stuff the prepared filling into the central cavity of each artichoke. Then, work your way around, carefully inserting spoonfuls of stuffing between each layer of leaves, getting as much in as possible without overpacking. The more filling you can tuck in, the more flavorful each bite will be.
  8. Place the stuffed artichokes into your prepared Dutch oven or casserole dish. Drizzle a little extra olive oil over the tops of the artichokes for added richness. Pour the white wine (if using), the lemon wedges, and enough steaming hot water into the dish so that the liquid comes up about 1/3 of the way up the sides of the artichokes. This will create a steamy environment that helps tenderize them perfectly.
  9. Cover the dish tightly with its lid and bake for 55 minutes. After this time, check for tenderness by piercing a fork into the base of one of the artichokes. If it’s not as tender as desired, cover again and bake for an additional 10-15 minutes, or until the leaves pull away easily and the heart is soft.
