In fact, we were even treated to warm “llama hugs,” where they gracefully wrapped their long necks around us in a truly unique embrace.

Pumpkin Cheesecake with Graham Cracker Crust

Ingredients
For the graham cracker crust:
- 5 ounces of graham crackers (about 24 square graham crackers), slightly broken
- 3 tablespoons of granulated sugar
- ½ teaspoon ground ginger
- 1 teaspoon of ground cinnamon
- 6 tablespoons of unsalted butter, melted
For the filling:
- ¾ cup firmly packed light brown sugar
- 1 teaspoon of ground cinnamon
- ¼ teaspoon of ground allspice
- ¼ teaspoon of ground ginger
- ¼ teaspoon of nutmeg
- 1 lb. cream cheese (two average-size cream cheese packages), at room temperature
- 3 large eggs
- 1 cup pumpkin puree (not pumpkin pie filling)
- Optional for topping: 2 ounces of melted chocolate for drizzling
Instructions
For the crust:
- Pre-heat the oven to 325 degrees F (160°C). Lightly spray the inside of a 9-10 inch springform pan with cooking spray. Wrap the outside of the pan with 2 layers of heavy-duty aluminum foil to prevent any water from seeping in if using a water bath (recommended for an even bake, though optional).
- Combine all of the ingredients for the crust (graham crackers, granulated sugar, ground ginger, ground cinnamon, and melted butter) in a food processor. Blend until fully combined, and the graham crackers are finely ground and moist.
- Pour the cracker mixture into the prepared springform pan. Press it down into the pan as tightly and evenly as possible to form a firm crust. A cup with a flat bottom can be very helpful for pressing the mixture down.
- Bake the crust for 15-17 minutes, or until lightly browned and fragrant. Let it cool completely on a wire rack, then place it in the fridge to chill while you prepare the filling.
For the filling:
- Increase the oven temperature to 350 degrees F (175°C).
- In a small bowl, whisk together the brown sugar and all the spices (cinnamon, allspice, ginger, nutmeg). Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), cream together the room temperature cream cheese on medium speed until it’s light, fluffy, and perfectly smooth. You may need to stop occasionally to scrape down the sides of the bowl with a spatula.
- Gradually add the brown sugar and spice mixture to the cream cheese, beating until it’s well mixed and no lumps remain.
- Next, add the eggs one at a time. It’s crucial to ensure each egg is fully combined into the cheese mixture before adding the next one. This prevents overmixing, which can lead to cracks in your cheesecake. Beat on low speed to incorporate.
- Finally, add in the pumpkin puree. Mix on low speed until it is fully combined and the filling is a uniform, creamy consistency.
- Pour the pumpkin cheesecake mixture over the chilled graham cracker crust in the springform pan. If using a water bath, place the foil-wrapped pan into a larger roasting pan and fill the roasting pan with hot water halfway up the sides of the springform pan.
- Bake for 35-45 minutes. Baking time can vary depending on your oven and the exact size of your pan, so keep an eye on it. The cheesecake is done when the edges are set, but the center still has a slight wobble when gently shaken.
- Once out of the oven, remove it from the water bath (if used) and let it cool completely on a wire rack. This slow cooling is important to prevent cracks. Once at room temperature, transfer it to the fridge to chill for at least 4 hours, or ideally overnight, before serving.
