These Rainbow cookies are relatively simple to make and such a fun project that will bring joy to everyone you share them with!

Ingredients

  • 1
    cup
    2 sticks butter, room temperature (vegan as desired)
  • 1
    cup
    granulated sugar

  • cup
    of milk,
    more as needed (plant based as desired)
  • 1
    teaspoon
    of vanilla extract
  • 1
    teaspoon
    of almond extract
  • 4
    cups
    all purpose flour,
    + more for rolling out.
  • ¼
    cup
    of cornstarch
  • 1
    teaspoon
    of baking powder
  • ½
    teaspoon
    of salt
  • gel food coloring

Instructions

  • In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt. Set this dry mixture aside.
  • In the bowl of a stand mixer fitted with a paddle attachment (or using an electric handheld mixer), beat the softened vegan butter and granulated sugar for about 2 minutes, or until the mixture is well combined and creamy. Scrape down the sides of the bowl with a spatula, then continue to beat for another minute until the mixture is visibly light and fluffy. Incorporate the plant-based milk, vanilla extract, and almond extract, mixing until just combined. Be careful not to overmix.
  • Gradually add the reserved dry ingredient mixture to the wet ingredients, mixing on low speed until a cohesive dough forms. This typically takes about 2-3 minutes. Stop mixing as soon as the flour is fully incorporated to avoid developing too much gluten, which can result in tough cookies.
  • Carefully divide the dough into six distinct balls, ensuring the following weights for optimal rainbow layering: two balls weighing approximately 250 grams each, two balls weighing approximately 170 grams each, and two balls weighing approximately 100 grams each. Wearing food-safe gloves, begin coloring the dough with gel food coloring. Start with a small amount of gel and gradually add more until you achieve your desired vibrant shade. Color the two 250-gram balls: one red and one orange. Color the two 170-gram balls: one yellow and one green. Color the two 100-gram balls: one blue and one purple. Work the gel coloring into each dough ball thoroughly with your hands for even color distribution. This process may take a few minutes per color.
  • On a lightly floured surface or between two sheets of parchment paper, roll the purple dough into a uniform 12-inch long log. Set this aside. Next, roll out the blue dough into a flat sheet, ensuring its length matches that of the purple log and it is wide enough to completely wrap around the purple log. Use the purple log as a guide to determine the exact dimensions needed. Carefully place the purple log in the center of the flattened blue dough and gently wrap the blue dough around the purple log, pinching the seams firmly to seal them completely. Continue this wrapping process with the remaining colors, layering them in this specific order from inside out: purple, blue, green, yellow, orange, and finally red. Each subsequent color should be rolled flat and wrapped around the previous log, with seams sealed to create a solid, multi-layered log.
  • Once your complete rainbow cookie dough log is formed, wrap it tightly with plastic wrap. Place the wrapped log in the refrigerator to chill for a minimum of 1 hour, or ideally, overnight. This chilling period is crucial for firming up the dough, preventing spreading during baking, and making it much easier to slice.
  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a large baking sheet with parchment paper to prevent sticking and ensure even baking.
  • Once the dough is sufficiently chilled and firm, carefully slice the log into 1/3-inch thick coins. To create the iconic rainbow shape, take each coin and slice it in half, forming two perfect rainbow arcs. Arrange these rainbow halves on the prepared baking sheet, leaving about an inch between each cookie. For best results, place the baking sheet with the sliced rainbows back into the refrigerator for 10-15 minutes while the oven finishes preheating. This extra chill helps maintain their shape during baking.
  • Bake the cookies for 11-13 minutes. Look for the edges to be just set and slightly golden, and the tops to appear matte rather than shiny. It’s common for the tops to still look a little “underdone” or shiny right out of the oven, but they will firm up as they cool to perfect tenderness. The bottoms of the rainbows may puff up slightly during baking; immediately upon removing from the oven, use a flat butcher’s knife or pastry cutter to gently press and flatten the bottoms back into shape. Work quickly before the cookies cool and set. Allow the cookies to cool completely on the baking sheet for a few minutes before transferring them to a wire rack to cool fully.
