Breakfast Quesadillas

Ingredients

  • 4 medium round flour tortillas
  • 5 eggs
  • ½ of a bell pepper, finely chopped
  • ¼ cup of red onion, finely chopped
  • ⅔ cup of cheese, cheddar or other mixture
  • ½ pound of chorizo, or other breakfast meat
  • 1/4-1/2 cup of black beans, drained and rinsed (optional, but highly recommended!)
  • Optional for topping: avocado and salsa

Instructions

  1. Scramble your eggs and cook the chorizo separately. Set both aside.
  2. Place one tortilla in the bottom of a large, generously greased skillet over medium heat.
  3. Top the tortilla with 1/4 of the cheese, then sprinkle HALF of the finely chopped bell pepper and red onion over it. Add HALF of the scrambled eggs and cooked chorizo.
