Ingredients

  • 7 ounce of chocolate, I used an extra dark chocolate
  • 2 teaspoons of coconut oil
  • 2 Natural Delights Medjool dates, pitted
  • ⅓ cups of creamy natural peanut butter
  • ⅓ cup of pumpkin puree
  • 1-4 tablespoons of water (as needed)
  • ½ teaspoon of pumpkin pie spice
  • optional: sea salt for topping

Instructions

  1. Line a muffin tray with 12 muffin liners. Set aside.
  2. Place the chocolate and the coconut oil in a small bowl and melt. This can be done either in a double boiler or in the microwave in 20-30 second spurts, stirring in between until smooth.
  3. Pour a heaping ½ tablespoon of melted chocolate into each muffin liner. Using a spoon, gently press the chocolate about ¼ of the way up the sides of the muffin liners to form a shell. Place the tray in the fridge while you prepare the filling.
  4. In a blender or food processor, combine the pitted dates, peanut butter, pumpkin puree, 1 tablespoon of water, and pumpkin pie spice. Blend until completely smooth and creamy. Add more water, 1 tablespoon at a time, only if needed to help the blender process the ingredients. The goal is to use as little water as possible while achieving a smooth consistency.
  5. Remove the muffin tray from the fridge. Divide the pumpkin-date mixture evenly into the chocolate-lined muffin cups, placing it on top of the hardened chocolate base. Spoon another heaping ½ tablespoon of melted chocolate on top of each cup, covering the filling. Gently tap the muffin tray lightly on the counter to help smooth out the top chocolate layer. If desired, sprinkle a pinch of sea salt on top of each cup for added flavor.
  6. Return the muffin tray to the fridge for about 30 minutes, or until the cups are fully hardened. Once set, they are ready to enjoy!
